Re: Carrot Halwa - Gajar ka Halwa If you want you can fry them. but usually I am doing as per the recipe only. So as per your taste you can alter the recipe and do. After all we are doing all for our taste only naa? :thumbsup
Whole Wheat Halwa - Godhumai Halwa Ingredients: Whole Punjab Wheat – 1 cup Sugar – 1 and 1/2 cups Cardamom Powder – 1/2 sp Ghee –6 tablespoons Saffron colour – 1 pinch (you can choose the colour as per your wish) 1/2 cup chopped dry fruits like cashew, badam and pista Method: Wash and soak the wheat for 12 hours. Grind in a mixer grinder by adding 1 cup water. Strain through a sieve to get a thick milk. Grind again adding ½ cup of water and strain again and squeeze out all the milk. Keep aside. Pour all the milk in to a thick bottomed pan, add sugar and cook on a low flame. Keep stirring continuously. Put one sp ghee in a deep plate and spread it. Add the ghee spoon by spoon when the halwa starts thickenng. Add the cardamom powder and the saffron colour. Mix well. Stir well. Take one spoon halwa and try to roll it. If you are able to roll it with your fingers means it is done. In another pan put 1 sp ghee and fry the chopped dry fruits and add that in the halwa. Spread the halwa on the greased plate. Allow to cool and cut into desired shape. Note: If you want a thick halwa like what we get in sweet shops, add 2 cups sugar in place of 1 and 1/2 cups. If you add chopped figs and tutty fruity in this halwa along with dry fruits, you can call it as Mixed fruit halwa.
Wheat Flour Halwa Ingredients: Wheat Flour - 3/4 cup Full cream milk - 1/4 cup Ghee - 1/2 cup Sugar - 1-1/2 cup Cardamom Powder - 1/2 sp Saffron colour 1 pinch chopped cashew nuts and badam 1/2 table spoon Method: Add 1/4 cup water to the milk and pour in a bowl. Add wheat flour and mix well with out lumps. Add saffron colour and mix well. Keep aside for 1/2 hour to 1 hour. Then in a deep pan put sugar and 1/4 cup water. Let the sugar dissolve completely and just start to thicken. Now pour the prepared batter and stir continuously. Add cardamom and ghee. Stir continuously until it no longer sticks to the sides of the vessel. In another pan fry dry fruits with little ghee. Now add fried dry fruits in the halwa. Mix well and pour it in a greased plate and allow it to cool. After some time you can make pieces. Note: Instead of wheat flour you can use maida also. Also add 2 cup sugar to get 'thick halwa' like shops.
