Hi, I am a restaurant hopper. I love appam/parotta kurma which we get in restaurants. But since it's difficult to always get it from outside after we shifted our own home, I want to try it at home. I have made kurma many times, but it never turns out to be tasty like the restaurant ones. Does anyone know what magical ingredients they add to bring that taste?
I don't know if this is restaurant style but its spicy and rich so you can try it. Most restaurants use lot of ghee and flavouring enhancers so may not be healthy for us. 5 Cloves 3 Cardamoms 2 inches of Cinnamon A pinch of poppy seed powder (optional) 2 tbsp Ginger Garlic paste ½ cup of grated coconut 5 Cashews 1 Big Onion 1 or 2 tomatoes (depending on the size) 1 cup of finely chopped and cooked mixed vegetables (carrot, beans, cauliflower, peas, potatoes) Salt to taste A pinch of Turmeric powder 1 and ½ tsp of chilli powder Cilantro to garnish Method: 1. Soak the cashews in warm water for 5 to 10 minutes. 2. Heat oil in a pan. 3. Finely chop and fry the onions. 4. Finely chop and fry the tomatoes. 5. Grind all the other ingredients including the cashews in a blender by adding a little water to it and pour this into the pan. 6. Add the vegetables. 7. Add salt, turmeric powder and chilli powder. 8. Add water depending on the consistency. 9. Heat till all the spices mix well and garnish with cilantro.
Hi main thing is the cashew,cream etc ,if its for veg then take peas ,carrot. Cauliflower potatoes cut into same small size,then in a tawa sauté coconut,g chillies,aniseed ,cashew pottu kadalai ginger , ,garlic,sauté everything till the aroma of coconut leaves out. Make a very very smooth paste .mix this with the boiled vegetables and give a nice boil .

@iamsrihere Is there a receipe for Kuruma without coconut, If yes can you share it with me please. I was under the impression Kuruma means main ingredient is Coconut, Thanks in advance.
