    Translation

    Hello chitra madam,
I am a big fan of your recipies.i follow most of your recipies, tips for my daily cooking.the jiffy methods of planning a menu, easy tips for daily cooking hasmade my life v easy.thank you soo soo much for your wonderful and selfless contribution...
I have a little concern here..few of your recipies are tamilnadu based.the ingridients are also in tamil.i mean though spelled in english they sound tamil.no offence here & I don't want to sound being a racist or regional person.i am a food junkie.i just love to eat irrespective of the cuisine.(i am from andhra & living in usa)
My concern is I am not able to understand the ingridients and some of the recipes.(eg like aval.i din't know what aval was so i had to google the name, image etc.)so i kindly request you to post the recipie names, ingridients in english or some common name which i can understand.
Thank you again so much for being patient and guiding the younger generation in better cooking.

    Query on the idly recipe

    Dear Ms.Chitra,
I am a big fan of your cooking and meticulous recipes. In your idly recipe you have asked to use "puzhungal" arisi. Is this different from the idly rice available in the market? If yes, would you be ale to explain the difference between the two and let me know if I can use idly rice instead in your recipe?

    Thanks!

    Re: preserving tomatos

wash, cut the tomatoes, add turmeric and rocksalt..leave it overnight.. next morning squeeze out the juice lightly and dry the tomato in the sun..for a few days if you don't want to use them immediately.. you will have your own sun dried tomotoes.

you can add some tamarind to the juice and dry that too.. and make a great pickle out of this. or just dry the juice until it can be taken out as pieces.. you can use this in vathakuzhambu and karakuzhambu..only remember it has more salt on it..

    Re: preserving tomatos

Have you thought about canning some homemade tomato purée for the winter months. The Ball canning company has a great website for preserving summer produce, here is the address

Also make tomato ketchup, great way to use excess tomatoes, you will love it, try googling homemade ketchup and there are quite a few recipes, just adjust to suit your family taste.

    Re: preserving tomatos

We always buy tomatoes in bulk. After washing them properly I cut them into halves and parboil them. When they cool, just puree them. Can be stored in small plastic containers in the freezer and used in place of fresh tomatoes when needed
