Interference in kitchen

    Dear friends,

    I want to share a simple problem that I am facing.I know that it is not a big thing but it is getting on my nerves so want some advice.
    My husband does not allow me to do certain things in the kitchen:
    The oil that I use for deep frying has to be thrown tsk i cannot use it for anything else.How can i do this so i have stopped doing any fried items altogether.
    Then any leftover food has to be used within 24 hrs.After that if i eat it he will scold me.I dont like to throw food.But my husband asks me to cook exact quantity but i dont know to cook exact quantity :confused2:.Friends i dont eat week old food,but atleast 2 days is ok i feel.For ex,if something is cooked today morning it should be over by the same night,we are not supposed to eat it even tomorrow morning.
    I get angry at times and i tell him clearly kitchen is mine and dont interfere but still he will not take me seriously.
    What should i do,pls advice me friends.

    Dear SM, there is reason behind your husband's actions.

    Main is that food looses its nutritional value upon continued reheating.

    Same with left over oil after deep frying. it looses polyunsaturated fats (good fat) and retains more of mono unsaturted ones (bad fat bad for heart)

    Due to our ingrained conservative habits, it is hard to throw things away but must learn to do it never the less. OR adapt to cooking for two. Unless you can eat cold food straight from the fridge. :)

    Dear Suji,
    You can keep food in different boxes for you two, so that you don't have to freeze-thaw the total food.
    Once the food is cooked, most of the nutritional value has gone....the only thing is that due to this, microbial contamination can be there.....but to be frank, I am too tired after office, so I used to cook for 3-4 days at a stretch.....and keep them in different box and use one box at a time.
    But for tart things like Sambhar etc.......I keep whole of the thing in a single container as the tartness......spices will let the microbial growth to minimum.
    This is true for Indian condition, but a cold place like in USA, the microbial growth is really minimum........so, nothing wrong in keeping food for 2-3 days.....
    But I wonder, if you are working, then how come you will get time to cook everyday morning........
    Anyways, if he is so, ask him to help and reduce the amount fo cooking.......once thing will be short, he will never be so interfering.......

    ur husband is right in all the issues he interfer .our other friends have given u good reason to support his interference.
    even my hubby is same .the only left over things he allow to eat after 24 hrs is rice.i have problem with big fruits like water melon & papaya which do not finish in one shot so have to be consumed later on.i try to purchase small size but it is rather difficult.
    as for frying i use a small vessel.it takes time but atleast the oil left is less so can throw it without feeling guilty about wastage.
    i have learned to make small quantity of dal & veg .with practice u can easily do it too.
    good eating & cooking habits go long way to maintain our mental & physical wellbeing.so do as he says.

    Hi,

    I would agree with your husband on the oil part - reheating used oil is very unhealthy as it increases trans fats which are bad for the heart. if you feel bad about throwing it away then store it in a separate container and use it up during regular cooking in the next few days. Rancid oil also gives a peculiar smell to the food. Regarding other food I think it is ok to eat if frozen or refrigerated after 2-3 days. Maybe you can get some nutritional info for your hubby which will convince him.

    A small correction about Mono Unsaturated fat.

    Monounsaturated fats (MUFAs) lower total cholesterol and LDL cholesterol (the bad cholesterol) while increasing HDL cholesterol (the good cholesterol). Nuts including peanuts, walnuts, almonds and pistachios, avocado, canola and olive oil are high in MUFAs. MUFAs have also been found to help in weight loss, particularly body fat.

    But reheating oil will increase the chance of Stroke, thats for sure.

    Maybe you can reduce the deep frying that you do to some extent,that is what I do.I do deep frying once in a while only and use very little oil for that.The remaning,I keep in a separate vessel and use it for seasoning,for dosas,chapathis etc.

    It is difficult to cook just for two,but with practice,you will get it,don't worry.You will get an idea as to how much the quantity will be just when cutting the vegetables etc.That will help you to decide.I cook three times daily not because of any compulsion but because I like to eat different things at different timesbonk.Sometimes,if something like curry or sambar etc is left over from lunch,I will do something for dinner which will go with that like chapathis or dosas or idli etc. This way,most of the stuff will get over the same day itself.Try it and see:thumbsup

    Hi Suji,

    Nice thread.
    What your husband saying is correct, but eating left over food is not too bad as he thinks.
    We have to keep the food in the freezer (deep freezer -18 deg.C minimum’) in small small boxes and if you want to use them, just ‘frost free’ a box and use it immediately. Don’t keep it again in the freezer for another day. In this way you will not waste any food. Now a days we can not waste food just like that. One more thing it is difficult to make correct quantity of food daily. Surely something will remain as left over. Before eating itself you can decide about the quantity and remove the excess quantity of food in a separate container and store in the Deep freezer or after eating immediately put them in a small box and keep in the deep freezer. If you go through my threads you can come to know how much I am using the facility of the deep freezer. It is a boon for us.
    Coming to deep fried balance oil, you must not use it for another deep fry. But as Sunitha said you can use them for seasoning and use them to make chappati or dosa.
    I am using like this for the past 22 years. We are healthy only. So you have to convince your husband and you have to follow proper storing of your left over food and try to give a new look to the dish , by adding one or more ingredients to it.
    Even after reading this you are not convinced, J no problem try to make small quantities of food and use less oil to fry. My policy is “Convince or get convinced” All the best!

    Thanks a lot for all ur replies.
    I am trying to convince my husband that eating 1 or 2 days is not wrong.He is little bit relenting in that.Thank god.
    But he is still not accepting for oil bonk thats still work in progress for me.
    In the mean while i am trying v hard to cook little quantity food so that i dont feel guilty of wasting.
