I used to soak the bitter gourd in the water used for washing rice (it's called arisi kalanja thanni). It may sound odd but this seems to do the trick ;-) regards janet
I have tried this one. Cut the bitter gourd and soak it into mixture of butter milk and turmeric powder combination. We call this butter milk + turmeric powder combination (moree). I have found this effective
Even I used to hate the bitterness. What I do is I deep fry it and eat it. Its very nice that way. But some of my friends say eating it with minimal cooking is best for health.

Fish and it's smell Well neha, just give a try to this..... Hang a wet towel in your kitchen and it will absorb the fish's smell. you might think it as silly but just see ..... it really works
Soak bitter guard in Tamarind water Vidhya, Very true...not only bitter guard, any vegetable eaten half cooked or with minimal cooking or sauting will get you the nutritions in it. Try this way... Cut the bitter guard and soak it in tamarind water for 30mins to 1hr before you cook. Then cook whatever dish you want and you will find bitterness reduced.
Try broccoli soup Uma, If you are interested try making Broccoli soup. They are easy to make and very healthy. Here is the recipe... 1 medium size onion 1 pound broccoli 1L water 1 cup milk 2 tspn lemon juice 2 tspn vegetable oil salt & pepper for taste - Peel and chop the onion finely, put the oil in a large saucepan on a medium heat, add the onions and fry gently until they turn slightly brown - Wash the broccoli and cut them into tiny florets (use the tender stem as well) - Add water to the fried onions and add the broccoli florets - Bring it to boil and simmer until tender - Once the florets are cooked, add milk and heat through, do not boil - Season with salt and pepper - Remove from heat and add lime juice and blend Serve it hot and it will be delicious 8) Note: You can use cauliflower in place of the broccoli and follow the same recipe for a delicious cauliflower soup.
To reduce bitterness in bitter guard Here is another tip to reduce bitterness in bitter guard……… Take some salt water and cut the bitter guard into this. After cutting all the pieces, squeeze the peeled bitter guard to remove the salt water. Then fry it. Bitterness will be reduced.
