Green Leafy Vegetables in US

    For the curry ,I saute cumin, fry onion , add the bok choy and frozen peas that you get in the Indian stores. Add salt, chili powder. You can add shredded coconut too at the end.
    For kootu, I cook the bok choy, add cooked moong dal and finally add ground paste of chili, jeera and coconut.

    Thanks Nivedi for starting this thread and for others for contributing so generously to it. Some of your recipes sound really yummy.

    I'm not a great greens fan but will try anything to make my baby eat some veggies...coz she's quite a picky eater, I have to keep trying out new stuff in the hope that something will click with her taste buds...

    So thanks to all those who posted these great recipes here...I'll try some this weekend and let you know the result...:)

    Do any of you know how to use up the green leafy part of bunched up tender carrots we get here ? The carrots taste like ooty carrots and the leaves look so fresh , it is a pity to throw them out ------ anybody uses them , maybe with dal or something like palak dal ?

    Hi all,

    Today I tried Purslane or Verdolaga. It was only recently that I learnt that these greens are called Parruppu Keerai in India. It is an excellent source of Omega 3 fatty acids and Vit E, B, C and carotenoids. It is called as Gangavaayilu aaku or Gangapaayala in Telugu. I cooked them the usual way with dal and tomatoes and a tempering of mustard seeds, urad dal, red chilli and hing. Tastes good.

    I make celery koottu. If anyone is interested I will post recipe for it.

    I would like to try celery kootu. I love celery for its crunchiness. Could you please post the recipe for Celery Koottu.

    Hi Usha,

    I got purslane from a local Vegetable shop that sells Mexican, Chinese and Indian vegetables. Purslane or Verdaloga is eaten by Spanish people in salads.

    Please do post the Celery recipe. It will be helpful for many of us.

    My family doesn't like to eat celery in salads. So I use this koottu recipe with celery and it is a hit everytime. It comes close to Vazhaithandu koottu ( Banana stem ).

    Prepping the celery:

    I break the celery by hand into pieces, at the same time removing the stringy fibers on the sides. This is very important to get a smooth taste in the koottu.

    After that , cut the celery into small squares to measure two cups of pieces.Keep the cutpieces with haldi and liitle salt in the pressure pan for one whistle. Meanwhile, soak 1 tbsp. of tur dal,1 tsp jeera, 3 tbsp. of coconut and 3 red chilies and grind to a fine paste. ( Less if you do not like spicy).
    Open the pressure pan and add the ground mixture. Stir for a few minutes until everything is blended well. let it cool for a few minutes and add yogurt so it resembles mor koottu.
    Lastly, season 1tsp of mustard seeds , hing and curry leaves.

    :bowdownthanks for this suggestion of using celery this way. I too make lots of different koottus, but it never occurred to me to use celery for that.

    Of course, I use it in salads,soups and curries.

    Sure, I will try this soon and let you know. Infact one of my favorite koottus is Vaazhaithandu which we never get here...now this is a wonderful idea.. !

    One question, have you tried making this like our regular koottu without yogurt ?
