What healthy meal did I eat today

    Hi,

    I welcome all ladies to share their healthy meals here. They can be healthy nurtitional meals or traditional meals that you were able to cook in less oil.

    My contribution for today is

    Mixed grain roti with baigan bhaja (eggplant rounds).

    I was very hungry and wanted to have a quick healthy and satisfying meal.

    Raided my fridge and caught hold of a big egg plant (aubergine).

    Baigan bhaja is a bengali dish made by frying round cut eggplants.

    My Version - I had cut thick round pieces of eggplant, applied salt to it, then covered the rounds with little oil (1 drop on each side of the round). Then on a pan added 1 tsp of oil and kept the egg plants for grilling, covered the pan with the lid so that the eggplants gets moist and cooked.

    The smell in the kitchen was heavenly. The egg plants rounds were cooked on low flame, they were moist from inside and crisp brown from out side.

    While the eggplant rounds were getting cooked I made the mixed grain roti.

    Mixed grain roti - Equal portion, wheat flour, bajra, jowar, wheat germ, wheat barn, satu (powdered roasted gram). Knead the dough in warm water and then roll in a roti and grill on a tawa.

    The hot eggplant rounds were sprinkled with little salt and red pepper just before serving.

    Real amazing good meal. The mixed grain roti takes time to digest and hence is far better option than only wheat flour roti.

    I followed the meal with 2 slices of water melon. I am stuffed and happy.

    Yum Yum and Yum.

    Do you know - eggplant is a source of folic acid and potassium.

    Great thread Shiva! It will give us immense ideas reading everyone's healthy posts. I also loved your "fist-rule" for cooking... it is making a BIG difference.

    Coming to the thread - the only healthy meal - LOL - its been an apple, yogurt and a grapefruit by noon so far. This is one of the bad days where I rushed out the house early with yogurt and fruit.

    I'll certainly come back with healthier food soon! :)

    P.S. Do you think we could set up a thread or something where everyone shares their workout play-lists? One thing that keeps me going during a workout is a good song, with the right beats/min... but my play list gets old too soon... so it'd be neat to hear from others what music keeps them going during a workout. What do you think?

    thanks a ton for starting this thread. i am so much interested in this topic. i had already started such topic but in different place; it was in parenting and kids, in baby/kids foods and there my first thread was
    "daily food chart for kids- 4 years or above" and
    "healthy food chart for kids and adults"
    but dear, i did not get any reply for the same. so sad!
    am so happy i happened to see ur thread. i am too much health conscious and would like to know what is a healthy meal for everyday.

    about my contribution: today i ate wheat flour roti (no oil) with one subzi. followed by avacado milk shake. i don't like yugurt so i take milk.
    at night, i normally eat boiled rice, curry and vegetable/fish fry.

    dear, i stay in abu dhabi (u.a.e), so would like to know what is wheat germ, wheat barn, and satu (powdered roasted gram)? and in which mall can i get these? i searched in lulu but could not get it.
    not seen it before so could you help me in knowing how does it look?

    about eggplant, i never knew it is a source of folic acid and potassium. since i like it very much i had taken a lot of eggplant while pregnant. but later after delivery everybody told me that because i took eggplant in more number my baby was born dark. but folic acid is the most advisable medicine in pregnancy for a healthy baby. what do say on this matter? does eating eggplant in pregnancy cause dark colour in baby? pls reply.

    Thanks for coming to this thread and appreciating it. Wheatgerm, wheat barn is available in carefour. Check them out in the section where burgur or broken wheat is kept. You can also check it out in Spinneys.

    Satu is very traditional, we get it in villages in India. Here in muscat there is one Indian store that keeps it. In India, when I was a child, mom used to mix satu in cold water and sugar and would give me in summer. It is a very good coolant. You can get roasted chana from market, take out the shell and grind it to powder, this will serve as a satu replacement.

    The skin color of any human being does not matter what matters is the color of the soul. I am sure the color of your child's soul is bright and beautiful. Whatever my color is I stand proud for it. As per my understanding skin color comes from genes, eating healthy food ensure a healthy child. A healthy body, healthy heart and healthy mind is far far important than a fair color.

    thanks a lot for the prompt reply. i totally agree with you in saying 'A healthy body, healthy heart and healthy mind is far far important than a fair color'. just wanted to know the fact about eggplant...what elders said to me after my delivery is correct or just a myth.

    dear, i will surely check out the wheatgerm and wheat bran in carrefour or in spinneys. still not clear about satu. can i get it here in abu dhabi? any idea? bcos i have a very heat body so thought it would help me cooling out.

    In sharjah there are lots of gujrati stores that keep authentic gujarati stuff, if you know someone there then ask them about sattu.

    Hi,

    2 days back I was watching a movie Kaatha. It was those nistalgic 1980 movies starring Nasrudin Shah, Dipti Naval and Farukh Sheikh. It had the mumbai I so much love watching, the chals, the people. In one of the scenes, Dipti Naval makes hot sabudana vadas.

    Oh my god, its been years literally years since I had those. In fact I never made them in my house fearing the amount of calories they have because they are fried in the oil.

    But then, the movie and the nostalgic time brought in the carving and I was dying to have them.

    So this is how I made them and they came out to be awesome.

    Procedure - Washed 1 cup sago seeds in water. Left very little water for them to soak and kept them over night. Next morning I microwaved 1 large potato, roasted and crushed handful peanuts.

    The mashed potato, peanuts, finely chopped green chillies, coriander, salt and 1 tsp sugar were added to sago seeds. The mixture was nicely binded like the way we knead the dough.

    Balls were made and now here comes the twist. I love my sandwich maker and I try using it for ever god damn thing. So I dropped 1 drop oil in all 4 sections of the toaster, put the sago patties in, the again dropped 1 drop oil on each sago patty, nicely spread the 1 drop oil on the patty and closed the toaster shut. After 5 minutes turned the patties over and left them again for 5 minutes.

    The first batch took longer time to prepare but the second batch was done quickly.

    To be honest it does take time to make sabudana vada like this but its worth the time. The taste is exactly the same and only 2 drop oil per vada (can you beat that).

    I guess its gonna be watermelon dinner for me today.

    dear, carrot is very good for eye, skin, hair and for whole body as well. i searched there in ur blog for carrot recipes. but could not find any. could you pls help me in finding the way out for eating the carrots daily. i mean what way i can eat carrots (1 or 2 daily). i don't like raw carrots. so pls share other way of eating it daily?
    i tried carrot soup, but it takes bit of more time and also didn't like any of its soups taste. do u have an easy way to eat carrot as a tasty one?
