Zucchini Subji Ingredients Onions - 1/4 cup diced Tomatoes - 1/4 cup diced Green chillies - 3 to 4 diced Zucchini - 2 cups diced Cumin Seeds - 1 tsp Coriander Seeds - 1 tsp Fennel seeds (somph) - 1/2 tsp Turmeric - 1/2 tsp Salt to taste Oil - 1 tbsp Coriander Leaves - a little Method Splatter cumin seed in oil, saute the onions. Add a little turmeric, add the diced tomatoes and green chillies and saute. Add salt to taste. When the tomatoes and onions are in a pulp,add the diced zucchini and let it cook for a while in low-medium flame. Powder coriander(daniya) and fennel seeds(somph) fresh in blender and add this along with coriander leaves to the cooked zucchini. Serve hot with chapathis.
