what is the right propotion for idly batter for all season??someone pls reply...

    instead of keeping in MW, take one bowl of hot water. keep the vessel (which u filled the batter) in hot water. It will get fermented

    3:1 or4:1 depends upon the quality of the dhal and rice,

    If dal proportion is high,idlies will be flat,dosas will stick to the tawa.

    If dal proportion is low ,idlies will be hard,dosas come out well.

    If the batter is too sour,idlies will be soft when hot and will become hard after some time.

    So,for idlies the ratio should be right.As I mentioned earlier rice:dal ratio can be 5:3/4 as we add fenugreek seeds.

    Idlies will be fluffy as we refrigerate the soaked urad dal.
