    Hi Kavya,
    I'm coming back to this thread to provide recipes using Tofu.
    I prepare Red Curry Thai Style .If you want to try the food before preparing by yourself there is a Thai restaraunt at Mowry Avenue next to B&N.Here is the recipe
    Saute onions in olive oil and then add corn, tofu , bamboo shoots, mushroon , thin sliced carrots. Allow everything to be cooked without adding any water.Now add a Red Curry Mixture(You can buy them at Traders Joe).And add water and allow everything to cook.At the end add salt and coconut milk and serve with rice

    Tofu-Cashew Recipe
    Is your son allergic to Cashew also.In this one I cut tofu, dip in corn flour, salt and chiili powder fry in oil.Then in another pan add oil, add cadhews once fried add fried Tofu.Serve this topped with soy sauce.

    And also is he allergic to sunseeds ? I have seen many allergic kids eating this butter with bread.
    Did you get a referral to dietician ?did they prescribe any supplement?

    Thanks Mangaii...My son is allergic to cashew and hazel nuts. His allergy specialist told us to avoid all nuts. I like the Red curry recipe.

    Hi Ladies,

    My toddler is bored of eating dal and vegetables and I bored of cooking it everyday. So I want to try something new for him. Any ideas to make interesting sandwich spreads. So far I have only mixed cottage cheese and avocado.

    Hello, Kavya

    I'm not a mother yet, but I do eat, so here's a sandwich idea for you! My grandmother loved cheese and jam sandwiches. Because of her, that became my favourite sandwich too. Imagine my surprise when I got a bit older and went out into the big wide world and noticed that not everyone was in love with cheese and jam sandwiches like I was!

    Anyway, you'll know that here in the US, peanut butter and jelly (poor excuse for jam, if you ask me) are far more popular. I've never liked those, so I still eat cheese and jam sandwiches like there's no tomorrow. Your baby may enjoy them because of the great combination of the tartness of the cheese and the sweetness of the jam. Even if I have a grilled cheese sandwich, I'll spread jam on the top until it's all melty, tasty and gooey.

    Other sandwich ideas (I'm assuming you're vegetarian):
    1) You can take leftover vegetables, mash it and mix it with a little curd, and use that as a spread.
    2) If you eat eggs, an egg salad sandwich is a healthy option. Boil eggs, grate them, and mash them with a spread (mayonnaise or Dijon mustard, diluted with curd if the taste is too sharp for your baby). My husband loves this sandwich, except for him, I'll also add chopped coriander leaves, and a chopped green chilli to the mixture (for a little Indian zing!) and sliced tomatoes to the sandwich.
    3) You can boil and mash potatoes, pumpkin, sweet potatoes, or any combination of these kinds of root vegetables, add a little cheese or creamed cheese, some cinnamon or Indian spices, whip in some curd, and use as a spread.

    I think I have more ideas, but I'm suddenly and inexplicably very hungry, so excuse me while I go rummage around in the kitchen...

    Thanks for the ideas Ansuya. My son is allergic to nuts and egg. So PB jelly and eggs are out of the question. Anyway thanks for your input. Keep it coming.

    i used to mix boiled and mashed carrots and cheese , boiled and mashed potatoes and cheese
    use it as a spread when my daughters were going to play schools and i used to make different shapes like cirlces, half moon, triangle, square, keep two pepper corns like eyes in a circle shaped sandwich, tell them its face, they will be so eager to eat those shapes,

    Chitra Viswanathan (ChitVish) has a coriander-tomato chutney recipe that I made and really liked. You can look it up from her A-Z link on IL.
    I haven't yet used it as a spread, but I felt it would be a very nice spread. It has tomatoes, coriander leaves, hing and red chillies (can tone down for your child)

    Hi Kavya,

    I do not use the mayonnaise or other spreads available readymade in the stores. I stick to plain butter / curd as the base and just add different fillings / toppings. Just take care that too much curd will make it soggy / tear the slice.

    When I boil chickpeas for sundal, I mash up some with a bit of pepper & cumin powder. Apply a bit of butter on one side & a tsp. of curd on the other slice -- keep the mashed sundal inside & your sandwich is ready. I avoid potatoes in sandwiches, instead can mash up cooked peas, add some jeera powder, lemon juice and use as filling. For this peas one, I don't use curd -- only butter.
    I also put shreds of chicken tikka or shish taouk when I make them, as filling with a lettuce leaf or cabbage leaf. Sometimes when I make paruppu vadai etc. , 2 or 3 vadais I will just crumble and use as filling . This will stick well to the curd too.
    At times I add a spoon of thick sambar, or the thick base of the rasam [ instead of curd ] & keep some beans poriyal etc. as filling !! Change for the kid & also more veg. can go in . I've also kept the palak paneer gravy as base & add one shredded chicken nugget & grated cheese on top -- like that whatever is at home, can make as sandwich.

    For a change instead of usual bread slice, can also try with tortilla as a wrap or burrito & with pita bread as a pocket sandwich. Esp. with the pocket sandwich , can add a whole lot of veggies. Whatever salad you're making at home, can just fill up the pita pocket with that !! Even our chana masala, rajma curry like that will be good stuffings. Our favourite is sliced onion, purple cabbage , lemon juice, lettuce + 1 masal vadai --- Big Laugh Yep !! my own version of the Arabic falafel sandwich !!

    If he likes sweet taste , can use honey, mashed bananas with brown sugar [ this one esp. will taste like panchamritham ] or 2 tsp. of Milkmaid [ sweetened condensed milk] as base and some fruit slices on top like apple / cherry/strawberry / banana -- any sweet [ not sour ] fruit which will go with the Milkmaid , simple ghee & sugar, or mashed up tinned pineapple with mozarella cheese , apart from the favourite jam. But I've noticed sweet sandwiches taste better if the bread is toasted first -- gives a nice , crunchy , rich dessert like taste.

    I've written whatever I've done / am doing now. Hope you'll find them useful. :)
