Tasty Karelas

    Stuffed Karela (Bitter gourd)



    Ingredients


    Karela (Thin and small) -4
    Red chili powder -½ tsp
    Coriander powder -½ tsp
    Turmeric powder -¼ tsp
    Dry mango powder -½ tsp
    Salt -to taste
    Oil -3 tbsp
    White cotton thread



    Method



    1. Select the karelas which are small and thin.Clean, wash and wipe Karelas absolutely dry. Remove both ends. Scrape the skin and Slit from one side .Put little salt in the slits and keep aside for 45 mins.

    2. Then wash the karelas properly to remove all the salt .The salt reduces the bitterness. Then squeeze the karela to remove excess water.

    3. Mix red chili powder, coriander powder, dry mango powder, turmeric powder and salt.


    4. Stuff the karelas with the above masala and tie with the thread.


    5. Heat oil in a wok. Add stuffed Karelas. Cook covered on a slow flame. Stir and turn occasionally.


    6. Cook till karelas is fully cooked and tender. After they are cooked, they look little dark brown in colour.


    This dish goes very well with rice and dal.
