Tantalising Pachadis & Salads for the weight-watchers

    An everyday Salad ! - rustle up with what you have !

    Chopped cabbage - 1/2 cup

    Any sprouts - 1/2 cup

    Chopped capsicum - 1/4 cup

    Grated carrot - 1/2 cup

    Grated paneer - 1/4 cup

    Pomegranate - 1/4 cup

    Chopped apple - 1/2 cup

    Salt, pepper

    To the above, add a small sweet potato, boiled & mashed.

    Toss everything together.

    Any one fruit can be omitted.

    Sweet Potato Salad – surprises you with apple, celery & walnuts as well !

    Sweet potatoes are a low glycemic index food. They have good antioxidant properties also.

    Boil, peel & cut sweet potato into ½ “ cubes.

    Sweet potato cubes - 1 cup

    Celery cut ½” long - ½ cup

    Apple with skin, chopped into cubes - 1 cup

    Capsicum pieces - ½ cup

    Walnut - ½ cup

    Dressing to pour:

    Drained, low fat curds - 4 tbsp

    Mustard powder - ½ tsp

    Salt & pepper.

    Toss together & serve chilled.

    Very filling with a simple soup.

    Capsicum & Snakegourd Raitas – For both, method is the same.

    For these raitas, the vegetable has to be very tender & very fresh.

    Chop into very tiny cubes.

    Chopped vegetable - 1 cup

    Oil - 1tsp

    Salt

    To grind:

    Grated carrot - ½ cup

    Green chillies - 2 ( more or less to taste)

    Fresh curds - 1 cup

    To temper:

    Oil - ½ tsp

    Red chilli - 1

    Mustard seeds - ¼ tsp

    In a kadai, heat 1 tsp oil & add the vegetable.

    Cover & cook on a low fire, in its own steam till soft.

    Remove & cool.

    Add salt, ground paste & mix well.

    Temper as given.

    The ground paste can be omitted if the amount is small & the curd is thick.

    This goes with bisibela, any vathakuzambu, Mulakootal etc.

    I used different coloured capsicums.

    Everyday Salad –2 - a simple delightful salad for daily use.

    I try to include one whole pulse and one dry or fresh fruit to make the salad interesting.

    Boiled channa - ½ cup

    Tomatoes, cubed after removing pulp - ½ cup

    Paneer crumbled or cubed - ½ cup

    Green seedless grapes - ½ cup

    Coriander leaves - few

    Chat masala, salt

    Toss vegetables & fruit together.

    Chill & add salt & chat masala just when you serve.

    Everyday Salad-3

    You can use a mixture of whole lentils like chick peas, horse gram, whole moong etc. Soak overnight with soda, wash well & pressure cook with a pinch of salt. Drain.

    Boiled lentils - ½ cup

    Chopped tomatoes (after removing the pulpy portion) - ½ cup

    Cucumber cubes - ½ cup

    Pomegranate - ½ cup

    Coriander leaves - few

    Salt, pepper.

    Toss everything together & serve chilled.

    In this, I have included dates for an extra taste.

    Sprouts - ½ cup

    Tomato wedges

    Cucumber slices

    Carrot Slices

    Boiled peanuts

    Chopped Dates

    Chopped coriander leaves

    Salt, pepper

    Toss everything together.

    Serve chilled.

    Soak black eyed white beans (chawli) for 6-8 hrs.
    Wash & pressurecook with a pinch of salt till soft.
    Drain.

    Boiled lentils - ¼ cup

    Chopped tomatoes - ¼ cup

    Green capsicum, chopped - ¼ cup

    Cucumber - ¼ cup

    Grated carrot - ¼ cup

    Black raisins - ¼ cup
    Crumbled paneer - 1-2 tbsp (can use tofu)

    Toss together.

    Chill & serve after sprinkling salt & pepper.

    Select fresh tender chow chow.

    Boil gram dhal till just soft, but grainy.

    Chopped chow chow - ½ cup

    Chopped tomatoes - ½ cup (pulp removed)

    Paneer - ¼ cup

    Boiled gram dhal - ¼ cup

    Grated paneer - ¼ cup

    Chopped seedless grapes - ½ cup

    Toss together & chill.

    Add salt & chat masala when serving.

    Gramdhal Kosambari – sweet & savoury!

    Sweet gram dhal kosambary is a traditional dish served in South Indian weddings.Gram dhal is soaked for 4-6 hrs, drained & used traditionally. If you are in a hurry, just boil till grainy, drain & use.

    Sweet kosambari:

    Gram dhal - ½ cup

    Freshly grated coconut - 2 tbsp

    Sugar - 1-2 tbsp (or to taste)

    Cardamom powder - a tiny pinch

    Toss everything together & serve.

    Savoury:

    Gram dhal - ½ cup

    Oil - 1 tsp

    Mustard seeds - ½ tsp

    Green chillies - 2, slit

    Salt, hing

    Grated coconut - 2 tbsp

    Lime juice - 1 tsp

    Salt, a dash of hing

    Heat oil & temper mustard seeds, green chillies & hing.

    Add gram dhal & salt.

    Mix well & switch off the stove.

    Add coconut & lime juice.

    Garnish with coriander leaves.

    Chopped cucumber

    Sprouts

    Pomegranate seeds

    Roasted & coarsely powdered peanuts

    Green chillies

    Lime juice

    Coriander leaves

    Salt

    Toss together all ingredients & chill.

    Add salt only when serving.
