    Warm Smoothy - ideal for winter!!

    This is good to be taken with breakfast.

    Saute in 1 tsp butter:

    Chopped apple cubes - 1 cup

    Chopped tomato cubes - 1 cup

    After 3-4 mtes add:

    Water - 1 cup

    Brown sugar 2 tbsp

    Salt, a pinch of cinnamon powder

    Simmer, remove & blend.

    Strain, serve warm with pepper powder.

    Kesar-Pista-Badam Milk - drink it hot or cold!

    Almonds & pistachios - 2 tbsp each

    Nutmeg powder & cardamompowder - 1/2 tsp, each

    saffron - 1/4 tsp

    mix & powder.

    This amount is sufficient for 1 litre of milk.

    Boil milk, add this powder, 2-3 tbsp sugar & simmer, stirring for 5-7mtes.

    serve hot or cool & serve chilled.

    Anjeer Milk - some like it hot; some, cold!!

    Mix together:

    Chopped figs - 3 tbsp

    Milk powder - 3 tbsp

    Fine rice flour - 1 tbsp

    Boil

    Milk - 500 ml.

    Add 3 tbsp of the above mix & simmer, stirring, till figs become tender.

    Serve hot with a dash of cinnamon powder sprinkled on top.

    The remaining mix must be stored airtight.

    Mocha Milk - drink it hot in winter/cold in summer!!

    Mix together:

    Brown sugar - 3 tbsp

    Milk powder - 3 tbsp

    Cocoa powder - 1 tbsp

    Instant coffee powder - 1 tsp

    Cinnamon powder - ½ tsp

    Boil 500 ml milk & add 3 tbsp of the above, mixed with 3 tbsp of water.

    Simmer for a few mtes & remove.

    Serve with a little powder sprinkled on top.

    Masala Chaas - heralding the arrival of summer 2011 !

    Masala Chaas is deliciously spiced!

    Fresh curds - 2 cups (whisk well)

    To that add:

    Roasted jeera powder - 1 tsp

    Green chilli-ginger paste - ½ tsp

    Black salt - ½ tsp

    Salt

    Temper with:

    Oil - 1 tsp

    mustard seeds - a pinch

    Hing

    Garnish with hopped coriander & serve chilled.

    Lemon Iced tea - lemons+mint+ginger!

    I am giving a basic recipe.

    Sugar can be substituted by artificaial sweetener or half honey + half sugar can be used.

    Put in a pan & heat together:

    water - 1 cup

    tea (neither dust nor leaf) - 1 tbsp (I used Red Label)

    Sugar - 4 tbsp

    Minced ginger - 1 tsp

    Mint leaves - few

    As soon as it comes to a roll boil, switch off & keep covered for 5 mtes.

    Strain, cool & add 3 tbsp lime juice.

    Dilute with 1 cup of water or ice cubes, Serve chilled.

    Thandai - the chilled delicacy of the North!


    Khus khus - ¼ cup
    Dry magaz - ½ cup

    Saunf - 2 tbsp
    Pepper - 1 ½ tsp
    Rose water - for flavour
    Almonds - ¼ cup
    Pass through a muslin cloth.
    Add 1 litre of milk & ½ cup of powdered sugar.
    Serve chilled.



    For a recipe of thandaai with saunf – that is the traditional flavor.
    For those who want to avoid saunf, I am giving another recipe.
    This recipe has no saunf!

    Soak in 1 cup milk:

    Almonds & cashews - 10, each

    Magaz (melon seeds) - 1 tbsp

    Soak in water:

    Khuskhus - 2 tbsp

    Falooda seeds - 1 tsp

    Grind the above 2 mixtures, adding:

    Rose petals - 1 tbsp

    Cardamom - 3

    Black pepper - 1 tsp

    Nutmeg & mace (javithri) - a tiny piece each

    Sugar - 3 tbsp

    Saffron - a pinch.

    Grind adding more milk or milk+water.

    Strain & chill.

    Serve chilled with with ice cubes at the bottom.
