    Chocolate Mousse - this is eggless, please !

    Milk - ½ litre + 1/2 litre

    Sugar - 4 tbsp

    Cocoa powder - 4 tsp

    Instant China grass - 100 gms ( chocolate or vanilla flavour )

    Corn flour - 4 heaped tbsp

    Cream - ½ cup

    Vanilla essence

    Walnuts - to decorate

    Mix China grass with 1/2 litre milk, mixing well.

    Put it boil & immediately remove.

    Cool it, stirring continuously.
    Now get the cornflour - cocoa mixture ready with the other 1/2 litre milk.

    Mix ½ cup cold milk with cornflour & cocoa powder & keep ready.

    Put the rest of the milk to boil.

    When the milk is about to boil , add cornflour - cocoa mixture.

    Simmer & cook to boil on a low flame, adding sugar.

    Remove, add essence & cool thoroughly.
    Mix this with China grass mixture, blending thoroughly.

    When completely cold, beat in the cream, top with nuts & chill in the refrigerator. Decorate with walnuts.

    Dry Fruit Delight - try this for the New Year Party!


    Figs 10 no:s

    Apricots 10 no:s

    Kismiss (raisins) 250 gms

    Chopped almonds 50 gms

    Chopped cashew 50 gms

    Soak figs, apricots & kismiss in boiling water – each separately – just enough to immerse them, adding sugar to your taste.

    Keep this overnight.

    Next morning strain them & reserve the strained & soaked liquid.

    Chop the figs, deseed the apricots.

    Cook the three together with the drained liquid in a pressure pan for 20 mts after the whistle comes.

    Allow the pressure to drop & cool.

    Add the chopped nuts & refrigerate.

    Can be served plain also.

    Serve with sweetened cream or icecream.

    .Strawberry Sandesh (1) - elegant looking dessert, ideal for a party!....

    Milk - 1 litre

    Lime juice or vinegar - 2 tbsp + 2 tbsp water.

    Powdered sugar - 3 tbsp

    Fresh strawberries, sliced fine - 1 cup

    Sugar (to mix with strawberry) - ½ cup

    Boil milk, stirring.


    Add the mixture of lime juice and water, gradually in teaspoons.


    When the mixture breaks & clear water can be seen, switch off the stove & do either of the following to get soft paneer.

    Mix the powdered sugar, knead until light and fluffy. Add a few drops of pink colour & mix well.

    Mix strawberries with sugar & keep aside for 3-4 hrs.

    Drain excess water from this completely.

    Spread half the mixture on a flat plate & keep the other half patted on a butter paper.

    Arrange the strawberries on the first half & cover with the other halof.

    Decorate & chill thoroughly.

    ..Apple Jalebi - Indian Fusion!!...

    This is a Tarla Dalal recipe, slightly modified.

    For jalebis:

    Apple rings - 12

    Maida - 1 cup

    Dry yeast - ¼ tsp

    Melted ghee - 1 tbsp

    Sugar - 1 tsp

    Oil - to fry

    Sugar syrup:

    Sugar - 1 cup + Water - 1 cup

    Saffron - ¼ tsp

    Rose water - 2 tsp

    To garnish:

    Chopped nuts, cardamom powder, rose petals

    Add the yeast and 2 pinches of sugar to 1/2 cup of lukewarm water. Mix well.

    Sprinkle 2 pinches of flour on top. Cover and keep for 3 to 4 minutes. If the cup is full of froth, the yeast is ready to use

    Mix the flour, sugar, melted ghee and yeast liquid and some warm water until the mixture has the consistency of a thick batter

    Cover and keep for 40 to 50 minutes. Mix well again.

    Dip the apple rings in this batter and deep fry in oil both sides until crisp. Drain. As this batter is a little difficult to handle, make sure it coats the apple rings evenly.

    For the sugar syrup:

    With water & sugar make a syrup of one-thread consistency & add saffron & rose water. Keep it warm.

    To serve:

    Dip the apple rings in the hot syrup after the syrup is removed from the flame. Soak for 1 mte & drain.

    Arrange on a plate & garnish.

    ..Chocolate Blast 1 - have a blast at the Diwali get-together!....

    This recipe is extremely easy to make & no cooking is involved.

    Cream - 100 gms

    Grated dark chocolate - 125 gms

    Powdered brownies/chocolate cake - 250 gms (can be store bought)

    Take the cream in MW bowl & warm for 40 secs.

    Remove & mix grated chocolate, beating for thorough blending.

    Add this to the powdered brownies/chocolate cake , in spoons, kneading to get a dough.

    Prepare a muffin pan/individual tins, by spreading cling film on them.

    Divide the dough into 4 big & 4 small balls.

    Take a ball & shape like a cup in the muffin pan over the cling film.

    Repeat with other 3 balls also.
    Keep in the freezer for 5 mtes.

    Take out, pour the cream-chocolate sauce over them & freeze for 5 mtes, till set.
    Remove& shape the small ball like a lid over it, pressing well on the cup.

    Keep in the fridge till serving.

    Before serving MW Hi for 30 secs just ro melt the sauce.

    When you cut,the sauce will ‘burst’ out!

    Serve with vanilla ice cream.

    Zebra Biscuit Pudding (1) - a breeze to assemble!!

    Dark chocolate Biscuits - 1 pack

    Fresh cream - 200 gms

    Beat the latter with 2 tbsp icing sugar + ½ tsp vanilla essence.

    Sandwich as shown in the photo.

    Wrap in clingfilm & freeze.

    When well set, remove & slice.
