Spinach - Boiled Egg Fry

    Yesterday, i picked up a fresh big bunch of spinach leaves, got eggs in refrigerator; so thought of making this quick and iron- protein packed fry. My elder son is not a good fan of leafy vegetables, but when he tried this recipe he became a big fan of it. Very easy and yummy recipe.

    Ingredients:

    spinach – 1 big bunch
    boiled eggs – 4
    onion – 1
    green chillies – 2
    oil – 3 tsp
    red chillie – 1/2
    mustard – 1/2 tsp
    chana dal – 1/4 tsp
    urad dal – 1/4 tsp
    cumin – 1/2 tsp
    garlic cloves – 4
    turmeric – pinch
    curry leaves – 1 sprig
    salt – 3/4 – 1 tsp(per taste)
    red chillie powder – 1 tsp
    vegetable masala – 1 tsp

    Method:

    Heat oil in a pan, add red chillie, chana, urad dal’s, cumin, garlic, turmeric, curry leaves and let them splutter. Add diced onions, slit chillies and saute them. Add chopped spinach and cook till soft.

    Add salt, red chillie powder and cook for 3 mins. Peel the boiled egg and quarter them and place them to a side of a pan and cook for 1 min. Gently mix them with spinach fry and sprinkle vegetable masala on top of these eggs and curry, gently toss them and place on a serving dish and enjoy it with hot steamed rice
