Hi Ladies, Sharing with you all a recipe that appeared in last weeks THE HINDU regional recipe column. I tried it and at first was not sure how it will be, but by the time we had a our meal, the flavours had really blended very well and we all enjoyed this version of Udupi Sambhar.:thumbsup 1/2 cup toor dal 1/2 teaspoon fenugreek seeds 1 teaspoon urad dal 6-7 red chillies 1 and half tablespoon coriander seeds few sprigs curry leaves 1/4 cup grated coconut a pinch of asafetida 1 cup diced vegetables of your choice (I added only onions as my DH is not very fond of veggies in sambhar) lemon sized ball of tamarind soaked in 1/3rd cup water salt to taste 1 and half teaspoon jiggery 2 tablespoon oil Cook toor dal till it is tender. Heat oil in a heavy bottomed pan and roast fenugreek seeds,urad dal,red chillies and coriander seeds. also add grated coconut and curry leaves and roast till light brown. Cool and grind to a smooth paste adding a little water. Heat oil in apan. Add mustard seeds. When they splutter, add a teaspoon of urad dal and asafetida. Fry for a minute. Add the green chillies and veggies and cook till you get a fine aroma. Extract pulp from tamarind and add to the veggies. Add salt to taste and then the jaggery. Cook till the rawness of tamarind is no more. Now add the ground masala. Saute for a minute and then add the mashed dal. Boil well. Add water for desired consistency. Your delicious sambhar Udupi style is ready. *You can adjust chilies and sourness as per your requirement. I had to reduce the sourness as we do not prefer very khatta sambhar. :thumbsup Love this - my mom makes it this way, and it's a clear favourite with everybody. She adds a lot of veggies like drumsticks, aubergines, shallots and okras too. I had no idea it was called Udupi sambar though. To us it's just 'plain' sambar.
For us regular sambhar is one that is not sweet. My Mom also taught me to make sambhar masala at home this way, but minus jaggery and urad dal. I made idlis to go with this instead of rice and poriyal.
RKG Instead of sizzling mustard in beginning,simply add veggies to oil and rest is the same. Finally after the adding and boiling of dhal,heat GHEE in a separate pan,sizzle mustard,add urd dhal,curry leaves,Asafoetida Powder,and few whole dried red chilles. Immediately pour into the dhal and stir.Sprinkle chopped coriander. Goes well with idly & dosa and very well with mini idly. Try and you will say WOW!!!!! This Ghee sambar is our family fav.
