Recipes with curd/yougurt??

    I made curd with more than a litre of milk bcoz of the expiring date of milk which I can use for 2 weeks...it may get sour by that time...
    Please share some recipes with the curd to finish it off without wasting.

    You can try various snack items like khandvi, dhokla and you can also try some curries like potato in yogurt gravy the videos of which are available in youtube!!

    you can make dahi vada, variety of raitas, dadhijanam(curd rice) and spicy buttermilk rasam etc.

    You can try these recipes with curds:

    1. Majjiga charu (Heat little oil in a pan,add red dried chillies,cumin seeds,mustard seeds,curry leaves and fry well.Add turmeric and fry, remove from heat and let cool.To the curds add salt,chopped onions,chopped green chillies,cilantro and mix well.Add the tadka and mix well.Serve chilled with white rice, tastes really yummy).

    2.Masala butter milk (add water to the curds and churn well to make a smooth buttermilk.Add salt,little roasted cumin powder,ginger and green chilli paste,little lime juice and mix well.Add little chopped cilantro,mix and serve chilled)

    3.You could also make murukku with curds, curd rice.

    You could also try these tasty dishes with sour curds:

    1. Mysore bajji - Ingredients: Maida - 250 gms, sour curd -100 gms, cooking soda - 2 gms dalda - 50 gms, salt to taste, ginger (chopped) - 10 gms, green chillies - 10 pieces, curry leaves - 1 small bunch, fresh coconut (cut into small pieces) - 50 gms, jeera - 5 gms, asafoetida - ¼ tsp, oil - for deep frying. Method: Rub cooking soda and dalda together. Add curd and beat together. Add maida, coconut, ginger, green chillies and mix well. Make into small balls and deep fry. Fry in medium hot oil.Remember to reduce the flame after adding the bondas to the hot oil and deep fry on a medium heat to get the best texture.

    2.Make rava dosa with sour curds - use instant MTR Rava dosa and follow their instructions, turns out exactly like the restaurant one.However, you need to check online to refer to the unique style of pouring the batter on the tawa(as its different from the regular dosa).

    you can add the curd instead of water when your making the dough for chapathi, adds to the protein content of the chapathi. I have tried it. or even to make bread.For desserts you can make shrikand in addition to the choices of curd vadai.
    you can make gujarathi Kadhi, mor keerai like mor kozhambu with greens.

    This is my husband's fav curry and he needs it everyday with rice; and a very popular curry in Kerala.
    You will need-

    Beaten youghurt (1 cup)
    Green Chilies (2 nos)
    Grated coconut (1/4 cup)
    Small onions (3-4 nos)
    Garlic (2-3 pieces)
    Jeera (1/2 teaspoon)
    Fenugreek seeds (1/4 teaspoon)
    Salt (to salt)
    Chilli powder (1/2 teaspoon)
    Turmeric powder (less than 1/4 teaspoon)
    Mustard seeds (1/4 teaspoon)
    Curry leaves (8-10 nos)
    Oil

    Procedure

    -In a blender add the yoghurt, coconut, jeera, onions, fenugreek seeds, chillies, garlic, salt and turmeric powder. When it is a fine mixture, add water to it (it depends on how you prefer the consistency).

    -Add and stir in the chilli powder after adding the water.

    -Heat the oil, splutter the mustard seeds, curry leaves and dry red chillies (its your choice). Once done, add it to the curry.

    This can be enjoyed with rice, my hubby loves this dish and sometimes dips chapatis in this curry and enjoys his meals

    You can also make Shrikhand...very easy and tasty..!

    Ingredients:
    2 cups curd
    1 1/2 cups powdered sugar (or adjust to taste)
    a few strands of saffron in a tsp of milk (dissolved)
    Crushed nuts - pista/badam/kaju - to garnish

    Method:
    Pour the curd into a muslin cloth and leave to hang overnight in your fridge. You can leave it out too, but it might turn sour. Keep a vessel below this bundle so all the water collects there and does not mess up your fridge.
    Untie the bundle next morning. Add powdered sugar and beat into the hung curd till it dissolves. Add the saffron infused milk and beat a little more. Garnish with nuts and refrigerate. The consistency should be something like custard..creamy.
    Serve cold, with puris or even eat it plain!
