    Asking if OPOS can be done in Instant Pot is a sure-fire way to create drama in the OPOS Facebook group! Jokes aside, join the group. It is very helpful. Ramakrishnan has also published an OPOS cookbook.

    Mr. Ramakrishnan has also introduced a new 2 litre cooker - specially designed for OPOS, being manufactured by Butterfly company in India. They call it 'Pressure baking' as against pressure cooking! It comes with specail features like separators, inner vessel and with a set of flash cards containing OPOS methods and would be ideal if you are a beginner. Just google and see whether it is available online for delivery abroad too.

    oh ok. I heard that further improvements are being planned based on feedback. So, i suppose we can continue to use the regular small cookers, except that it is better if it is stainless steel as usage will be much more.

    @ILUser07 - I started cooking OPOS way this week itself.So,you need to join OPOS support group.Follow the lessons one by one. You can use 5 ltr cooker too but tweak the quantity of water in the first lesson so that you get the first whistle between 1 and 2 mins.Also ,just preheat the electric coil.Keep the cooker once the coil is red hot. Hope this helps.

    I got my prestige deluxe 2 lt pressure cooker. Damn it costed $44 in Indian store. How long are you preheating the electric coil? I didn't understand why we have to standardize. Is it so that once we get the whistle between 1 and 2 mins, we use that heat setting to cook other recipes?

    OP it is similar of IP water testing and the other point is as you quoted!! I am a vivid OPOS user too, it made our life easier!!!

    Yes , exactly for this reason. I have gas flame but still it took me 3 trials to get the first whistle between 1-2 mins.Put the cooker on the coil only once it is red hot .I keep the flame on high. Made beans ( 2nd lesson),gajar halwa,sooji halwa, paneer makhni, chhole and onion - tomato curry paste. Everything turned out good.

    A copper plate (heat spreader, heat diffuser) on the electrical stove (or a smooth ceramic top (electrical coil is underneath) would help. It can also be used on gas stoves. People in America or Canada can buy a copper sheet (1/32 or 1/16" copper foil) in a local hardware store much cheaper than going to Amazon.com for it.
    The plate (cut to the size of the bottom of the pressure cooker) sits between the flame/coil and the pot, and transfers the heat uniformly and quickly up to the pot. Since OPOS uses very little fluids within the pot (don't want layers getting all mixed up), the danger of bottom-most stuff sticking to the bottom of the pot can be avoided if the cooker is not sitting directly on a non-uniform heat source - either a flame or a coil.
    I am borrowing a picture from amazon; but not recommending you buy that one. My copper plate is 1/32", and I don't remember if it was Lowes or some other hardware merchant. This is certainly not safe in a household with children, or even teens. Pots that are way too undersized for the plate (as in the picture) are not good. An ideal diffuser plate should be the same size as the bottom of the pot. This is the same principle as "copper cladding" the bottom of the vessel.
