muslim chicken biryani

    i gone to non veg dinner to my relatives house . muslim chef cooked biryani watched near by saw each and every step from them .

    first 1 kg chicken = 1 kg basmati rice i.e . so 4 cups of basmati rice
    1. oil -1/2 cup non stick pan with lid (i used)
    2. add cinnamon -3 medium stick , cloves-2,3- cardamon .fry for 1min .
    3.add chopped onion like thin long-400 gm fry it till golden brown color

    4. add ginger-garlic paste - 2 tbspn fry till raw smell goes off.
    5. add 1 kg chicken pieces and salt fry 1 min
    6 one by one add 200 gm tomato, green chillies -5, chopped corriander leaves 1 medium bunch , chopped mint leaves medium bunch , red chilly powder -3 tsp now mix all and fry it 5 mins . closed the lid 10mins make sure chicken should cooked 3/4 if not again 5 mins

    7. add shakthi chicken masala 1 tsp, add 5-6cloves garlic , add curd -2 tsp fry for 2 min

    8. add 4 cups basmati rice fry 2 mins add equal to 6 cups of water i.e 1 cup basmati rice =1 1/2 cup of water
    9. add salt to taste , add 1/2 lemon , ghee 2 tbspn , and add little kesar color close lid of the pan with high flame while start boiling immediately mix it with spoon once , stove turn to low flame for 20 mins dont open the lid in middle .turn off the stove . wait for 20 mins again mix it rice . now biryani ready to serve.

    # if any burnt rice smell comes dont worry usually last layer of rice might burn . but rice taste superb.......

    Thanks for sharing this recipe! Have a couple questions:
    Step 2: I assume it is brown cardamon....how many?
    Step 9: I was thinking this would finish nicely in an oven but also thought that you could dump everything in a rice cooker to finish it....what do you think? This might avoid danger of burned rice.

    green cardamon -3 , better u do directly in stove its gives good taste . but u can do in oven or pressure cooker also as u wish .

    thank you.....

    don't add chiken in th step. add it after adding all the ingredients in 6th step and don't add biriyaani masala. try like this you would get a different taste with tastes good. and you can add half cooked rice insted of raw rice this help the taste of chicken not to change.

    but wat i wrote do same way its comes good taste . bcoz my husband like this method very much . u can avoid biryani masala. but add before chicken .
