    Mixed Vegetable Curry

    Ingredients
    1med.potato
    1 small carrot
    5French beans
    1small capsicum
    1 cup cauliflower (small flowerets)
    ½ cup peas
    1/2 tsp. fenugreek seeds
    1 tsp. cumin seeds
    1/2 tsp. red chilli powder
    1/2 tsp. turmeric powder

    1 tsp coriander powder
    1 large tomato
    salt to taste
    1/2 tsp. sugar
    2 tbsp. oil

    For masala,
    1 med.onion
    2 tbsp. coriander leaves finely chopped
    1 tsp. mint leaves finely chopped
    1 tbsp. ginger –garlic paste

    2 greenchillies
    1tsp poppyseeds
    2 tbsp grated coconut
    Method
    1. Clean, peel and chop the vegetables into chunks.
    2. Make a fine paste with the ingredients given in the masala.
    3. Heat oil in a pressure cooker, add cumin & fenugreek seeds, allow to splutter.
    4. Add the masala paste and stir till the oil separates.
    5. Add all the vegetables and mix well.
    6. After all masala is coated to the vegetables, add turmeric, redchilli and coriander powder and mix well.
    7. Then add chopped tomato, salt and sugar.
    8. Add 1 cup of water and pressure cook for 3 whistles.
    9. Serve hot with phulkas.
