Lunch Ideas - Creating Balanced Vegetarian Meals

    Sorry for being absent for so long.still under the weather and gaining girth now is that surprising when your Physio says stop walking and your doctor prescribes steroids lol life goes on.

    Have not been eating balanced though healthy . Well almost.

    Thought I should push some life to this thread.since we are doing healthy lunch box too thought maybe a pic of dd’s box would do the trick

    Here comes my power packed paratha....
    The normal wheat flour, but i have added dry roasted oats made to powder, ragi flour and bajra jowar flours to make my chapathi dough...

    For the filling i have used capsicum, carrot,boiled sweetcorn, onion and a tsp tomato sauce....

    Prepare parathas as usual and serve with curd mixed with salt, chaat masala

    dd says the earthern flavors steep into the veg rice and the aroma is great. it is a thursday and i would not be tasting it

    vegetable rice, oranges, cucumber+olives, sweet potatoes and nuts(pumpkin, badam and raisins)

    she is out from 9 to 8 so when mom is in town she gets a balanced box..
