Lunch Ideas - Creating Balanced Vegetarian Meals

    Tried creating a high protein bowl meal today. Made a soba (buckwheat) noodle salad with tofu. End result was healthy and flavorful -- 483 calories, 52 grams of carbs and 39 grams of protein. Eating enough protein is a perpetual struggle for me, so this meal was nothing short of a culinary coup!

    Marinaded the tofu in low sodium soy sauce with chilli flakes, and air fried to cook. Used the marinade, rice vinegar, grated ginger and sesame seeds to make a dressing for the salad.

    Amazing Gauri. Wish I could snatch that plate through this screen! :-D Have not been recording my diet last one week. Being away from home always skews one's diet and eating habits. Have to get back. My weighing machine is also playing up, so don't know how much damage has been done!

    I know. Happens to me every time I travel or work pressures increase. Can't be helped. Don't worry about the weighing scale. If it is rude to you, ask it to stand in the corner for a week...until you get your meals on track. :D

    Gave it a new battery, Gauri. The damage is roughly 1 kg. Of course, not on an empty stomach. Shall know more accurately tomorrow morning. Could be worse for no exercise either through the week. Half of the holiday was ruined by severe back and leg pain. Anyway, shall be back on track now. And the good bit is that I have evening classes starting from today. Which means the riskiest part of the day (food wise) will be spent outside the house. I need to work out how to organize my exercise plan. I used to do a lot of my walking in the evenings.

    Just recovered from a week of Influenza - good news is lost a kg bad news 2 weeks plus of no exercise and still lingering cough :-(

    Sunpa, have you tried warm milk with a pinch of turmeric, kalkand or honey and jyestha madh (licorice wood) in it? The last is very good against coughs.
