low cal oats cookies and coconut chocolate muffins.

    AFter navarathri, you are flooded with so many coconuts, you absolutely have no idea what to do especially if you are don't use much. from a family that used 2 coconuts in a week we have come to 1 coconut in 15 days, so you can visualize what happens with all the excess.. oh i did distribute a lot,
    but again all those people also got coconuts from other people..

    SO i grated everthing. one third i roasted in the microwave and freezed for future use. one third i took coconut milk to be used for cooking. one third i used for baking.

    two recipes that have come absolutely delicious according to the family. (these days the family does not grumble on the lesser sugar...i hear you..yeah they have got used to it)

    OATs and coconut cookies..(absolutely crunchy)
    1 cup oats
    1tbsp roasted barley powder (you can use wheat )
    3tbsp- palm candy sugar
    2 tbsp-coconut grated..i
    1 tsp –coco powder
    1tsp – coffee brewed..
    Pinch of salt.
    1tsp – oil..
    Preheat oven at 200degrees
    Mix the coffee, sugar, salt,oil and a 2 tbslp water..mix it well.. add the oats, coco-powder
    Dropped them on a baking sheet and baked for 12 minutes ( a few more minutes if you like the crunchy.)..makes around 10..

    Coconut/chocolate muffins.

    1 cup whole wheat flour.
    ¼ cup sugar powdered.
    1 cup grated coconut.
    1 tblsp coco powder,
    1 tsp – coffee.
    ¼ oil
    ½ cup milk.
    Pinch of salt
    ½ tsp cooking soda.
    ½ tsp baking soda.
    Powdered nuts optional.
    Preheat oven at 200 degrees C.
    Beat oil, milk, sugar, salt.
    In a bowl sieve salt,flour, baking soda, and cooking soda into the flour mixture pour in the oil, sugar mixture..add the grated coconut. Add in the powdered nuts too.
    Spoon into muffin cups or greased muffin trays..sprinkle coconut on top.
    Bakes for 20 minutes, or until a toothpick comes out clean..it take a little longer than ordinary muffins because of the coconut and wheat flour.

    Shanthiiiiiiiiiiiii,
    I am drooling.
    So what if I did not get enough coconut during navarathri..I will buy them to make the muffins. But will try to do them with half maida-half wheat :tongue.

    HI Shanvy,

    I feel it to be an appietiser... really on seeing itself it feels to be delicious. I think you all know about hte dish "Sosdhi" mainl did out of coconut. If u are'nt aware ill say the reciepe. Else u can mention tht dish too... its very simple one..

    Akila, thanks thanks. absolutely delicious.. now let me let you in on a secret..my fil wants me to bake some muffins for neivedyam for karthigai instead of the usual pori..
