    History of the Kulfi Falooda


    Falooda owes its origin to Persia and came to Indian shores during the Mughal period. Originally this drink was prepared by blending vermicelli, rose syrup, gelatin pieces, psyllium or tapioca seeds with water or milk. In Persia, the vermicelli is made from arrowroot and in India it is made from wheat. Originally, ice was gathered from mountain regions in winter and stored in insulated chambers underground covered by dome structures. This did not melt the ice during summer even in the desert regions. With the advancement in technology and tastes of people, sugar and rose water were later added to the vermicelli. This gave birth to another variant of the Falooda. With the passage of time other variants surfaced and there were some drinks made of noodles and blended with seasonal fruits. The most popular variant of Falooda in India is the one where wheat noodles are used with rose syrup. You will also find some faloodas served like milkshakes in prominent restaurants and eateries across India.

    Interesting Variants of Falooda


    The falooda has been made into several popular variants across the world. The following are some interesting and popular versions of this exhilarating drink that people love to take especially after a meal-


    • People in Pakistan and Northern India like their falooda to be in the form of an ice cream sundae float. This drink is generally taken after dinner.
    • Bangladesh has an interesting variant of the delicacy in the form of creamed mango, coconut, ketaki extract, Shagu pearls and pistachios. For making a distinct flavor, strong black tea is added to the vermicelli and milk.
    • The Rabri falooda is quite popular in the Indian sub-continent
    • The Iraqi Kudis have a unique variant of the Falooda where they make the drink with thicker vermicelli. A similar modern drink in East Asia is called Bubble Tea.
    • Falooda has a Thai cousin called Nam Manglak- both the drinks though made from different ingredients are similar. The Thai version has sugar, rose water and plain water mixed with tapioca pearls, shredded jelly and Job’s Tears.
    • South Africa also has a similar version of the drink and is often consumed after a meal.


    How is this super cool drink made at home?


    Kulfi Falooda is very easy to make and it can be served during sultry summers after a meal. As mentioned above, there are many variants of Kulfi Falooda however the following is a basic recipe that you can make at home and serve to your family-


    Ingredients


    • Kulfi- made from 1 kg of milk
    • Ice Cubes
    • Falooda seva made with cornflour
    • Sugar- 2 cups (400 grams)
    • Cornflower-100 grams
    • Rose Syrup
    • Full milk cream-1 ltr
    • Sabza seeds or tukmaria seeds( soaked)- 1 tea spoon


    Directions – One tablespoon of rose sharbat is poured into a glass. The size of the glass will depend upon your preference. Add two tablespoons of Falooda Seva followed by the Sabja or tukmaria seeds, ice cubes (according to preference), milk cream and kulfi. Garnish with rose syrup and serve immediately.


    The above ingredients serve 10 glasses.
