Dear friends is it good to use eno salt in certain recipes like dhokla and rava idli. Will it not cause any harm to kids... can kids consume those recipes. any other ingredient that substitutes fruit salt... please clarify
In many places, where soda bicarb is not available, we use ENO fruit salt. Preferably the plain (regular), not flavoured. Nothing wrong in using that. Try to buy some from India always whenever you go for your vacation.
It will be better to use lemon falvour in case of dhoklas etc. You can add about a teaspoon. Mix well. If you see the batter has become light and fluffly that means the quantity of Eno is enough.
I use Fruit Fresh instead when I can't find Eno at the Indian Grocery. You can find Fruit Fresh at any regular grocery store, in the section with baking goods. It doesn't have baking soda in it but it does have citric acid and ascorbic acid, it works for me in dhokla OK, with some baking soda. Eno is about 60% baking soda and 40% citric acid, so substitute accordingly.
