    @justanothergirl,

    Madam Supreme is back from India end of March and having some cataract issue that need to be operated. I promised her some free time until this surgery. We bought lunch from Wholefood on Wednesday, I cooked Bindi curry, Pumkin Sambar and Tamato Rasam yesterday and cooked Avial, Rasam and Brown Rice today. Happy wife, happy life. :)

    I need to install the Rotimatic also this weekend.

    You are welcome to come home any day we live in Sunny Florida.

    Would the IP be a useful gift for a 19 or 20 yr old college kid who is moving from dorm to apartment? Not for birthday or anything, just like that or for patiently answering my many questions about high school and college over the years.

    I was thinking, once they know how to use it, kids will use it? It will help to make biggish amount enough for 2-3 meals? Safer too.. less risk if the IP Is left on and kid goes out?

    @Rihana,

    Yes it is a great gift. She can eat healthy and there is no risk. Tell also that high grades will get her Rotimatic. Just kidding! Please give gifts without any conditions.

    Thanks for the response. That's what I thought too.

    It's for a he, actually. South Indian, vegetarian kid. He is done with second year of college and moving to a shared apartment.

    Rotimatic - I am now eyeing that myself. Wonder what grades I need. : ) already hinted that I don't want anything for Mother's Day. Maybe I can accumulate some points by waiving away gifts while the rotimatic price settles down a bit. : )

    If it is a he and is doing undergrad, don't bother. Cooking is prohibited during undergrad by peers no matter whether a he student is a vegetarian or not.

    Jeeze! I would have never guessed in a million years that rejecting a gift for Mother's Day means looking for something very special. I always enjoy reading and writing posts here but the peripheral benefit is such crucial clues that makes my life easier at home. :)

    Here is mixed Vegetable rice I did on Monday as my wife went through a cataract surgery. The details about the ingredients and how to make will be published later.

    Mixed Vegetable Rice Ingredients

    1) Chopped carrots
    2) Chopped sweet peppers
    3) Peas
    4) Chopped raw mangoes
    5) Curry leaves
    6) Cashews
    7) Cloves
    8) Basil leaves
    9) Oil
    10) Salt
    11) Chili powder
    12) Turmeric powder
    13) Mustard seeds
    14) Basmati Rice

    Preparation Method

    1) Put Instant Pot in Saute mode and pour oil (I use very limited oil) and heat it. Put Mustard seeds, curry leaves, cashews, cloves and Basil leaves and keep stirring until cashews become brown.

    2) Add salt, chili powder and turmeric powder and stir it again.

    3) Add carrots, raw mangoes, peas and sweet pepper along with one cup of rice and one and half cups of water.

    4) Move it to the manual mode and set the timing for 8-10 minutes.

    5) After it comes to 0:000, move the pressure to vent position and release the pressure.

    6) Keep it warm at least for 30 minutes before opening.

    P.S.: I had prepared onion raita to go with the rice and my wife and MIL really liked it very much. Shoba was very pleased because I gave her much needed rest for a day for post-operative care.

    What is female for Doubting Thomas?

    So, a friend of mine is still not convinced that the InstantPot is the next best thing since ready-to-cook rotis. I told her about making pasta in the IP using this recipe: Instant Pot - Recipes

    She, MIL style, points out that boiling pasta and draining the water is better since the "bad" whatever go away in the water. So, the way I cooked, put pasta in IP and just sufficient water, is not healthy.

    Is she right?
