Induction scalloped potatoes

    Warning: this is not a recipe for those counting calories.

    Scalloped potatoes is normally a baked dish and used as a side dish but it can also be a main dish with the addition of ham or cheese. I have found this is easy to make on an induction cooktop.

    5 med white or red potatoes, thinly sliced preferably on a mandolin
    butter
    salt and pepper
    400+ ml half and half (half milk half cream mix)

    I used a ten inch nonstick fry pan with lid.

    Melt a couple tablespoons of butter in the fry pan. Add half the potatoes evenly to the pan, use salt and pepper, add second half, salt and pepper. Please if you want masala or other ingredients add them eg some peas. Add the half and half about 2/3 the depth of the potatoes: don't cover them in the milk.

    Cook covered at 1200w with temp 210F (99C?) (just under boiling) for 25 minutes. Add cheese to the top the last 5 minutes if you are going to add cheese (cheddar works well). The bottom may brown but don't worry...that is delicious.

    Normally scalloped potatoes is an oven (not micro) dish but is hard to get the perfect consistency. Induction method gets the perfect consistency with hardly any work. Forgot to mention: do NOT stir this.

    I doubt you can do it stovetop. Better to do the other usual way of baking the potatoes in the oven covered. If you do it stovetop, you would have to stir it and the potatoes will break up which would defeat the type of dish that it is.

    Yeah...this is definitely a dish you have occasionally as a treat. After I figured out this recipe I made a pan of it for an Indian pal who just loves scalloped potatoes and she tells me on the phone she will just have half the amount but ended up wolfing down the whole thing as her dinner. Made hers with cheese as she loves cheese.

    Thanks for this recipe. I just made it on stove top, as our old oven is not working. I used half milk and half cream. Came out yummy. Thanks again :))
