Idly from Idly rava

    Hello everyone,

    I want to prepare idly from Idly rava can any one pls tell me the proportion.

    how much should be the idly rava and how much should be the urad dal.

    Reena,
    Mix 1 cup Urad dhal Flour, 1 1/2 cup Idli Rava, approximately 2 cups of water in a bowl
    Cover the batter and allow it to ferment overnight
    If you live in a cold place, leave the batter in the oven
    It may not ferment as good as the batter made by grinding, but thats ok
    Add 2 tsp of Oil, Salt to taste and mix well
    The batter should not be too thick - idli will turn out soft if the batter is thin (thicker than dosa batter, though)
    In the idli pan steam the idlies for 10 mins

    In Andhra, we prepare it this way:

    1. Soak 2 cups of urad dal for about 4-5 hours
    2. Grind this into fluffy batter
    3. Add 3 cups of washed and lightly soaked (10-15 mins) idly rava to this batter
    4. Add salt as per your taste

    You can use this batter right away. No need to ferment this. The remaining batter should be immediately refrigerated.

    I have mentioned urad dal and idly rava in 1:1.5 ratio. But good quality urad dal gives fluffier batter. For those you can use 1:2 ratio.
