Idlis turning red

    Hello [​IMG]ladies

    I bought Urad dal flour and mixed it with Idli rava and fermented it over night.
    Then when I was pouring the batter into idli mix I used cooking spray to oil idli moulds.
    When I steamed them they were in the color of red. I took a picture and I am attaching it .

    I thought spraying canola oil made this. but later I used the same batter with out using the cooking spray still the same redness..
    If any of you experienced this please tell me why this occurs and how should I avoid this?

    Do you add methi seeds ( fenugreek seeds) with Urad dal......
    It may be a reason.
    Or
    Do you roast the rawa before soaking it???

    It looks a little different. Are you sure the batter is good. I would personally advice you to not eat it. It could be with roasting rava too.

    Here is how I prepare my batter

    Idli Rice - 3 3/4th cup
    Urad Dal - 1 1/4th cup
    methi seeds 1 teaspoon

    Soak it for 8 hours and grind rice separately and urad dal + methi seeds separately. Add salt and leave it over night to be fermented.

    Try this and it should work...I know this does not answer your question though :(

    Is batter also red or organgish color?

    I think it is the urad flour that you are mixing. I think it is roasted ones, which might get red in color.

    I also think it has something to do with your urad flour. Please check to see what kind of flour it is.

    I too faced the same situation, but when i reduced the quantity of methi seeds used i did not get this. just add 5 to 6 methi seeds instead of 1 tea spoon... Try it this way...

    I doubt if adding one spoon of methi seeds will make idlis turn this red/brownish. Might be a bit dull colored idlis but not so much. I add them very often.

    Like others here, I too guess its got to do something with the urad flour that you used. I read somewhere that presence of cooking soda could discolor the idlies.

    This is the first time I am seeing something like this. But it looks good :p
    I think it should be because of roasting of rava. What color is your batter?
