Go The Salad Way

    My grandma taught me a trick to get them out in a non messy way. Basically cut the pomegranate in half. Hold one piece in one hand (skin side facing up) & with your other hand use a deep, strong, steel ladle (like the ones we have in India..the sambhar serving type) and keep knocking on the outter part of the pomegranate. Voila ! The seeds come loose quickly and easily. No more messy fingers.

    We get rotiserrie chicken and add that to salads. Another option is to roast split chicken breasts. Ina 'Barefoot Contessa' Garten has a good recipe for it. I shred/cube and freeze the extra cooked meat for future meals. You can also get the packs of pre-grilled chicken pieces.

    My salads are not innovative or something. I try to use locally available fruits. Also I haven't tried veg salads recently, I will be doing the same and posting soon.

    I debone a rotisserie chicken, chop up the meat, store in the fridge. I add the chopped chicken to salads, stir-frys, soups, whatever is cooking.

    Sometimes I make boneless tandoori chicken breasts. Cube and store in the fridge for salads. I do this with shrimp, too.

    I always have a supply of chopped raw fruit and veggies in the fridge — celery sticks, carrot sticks, radishes, grapes, pineapple, etc. We snack on them all day. I add some of this to a salad along with nuts and meat/paneer.

    In a pinch, I've asked the deli dude to cut a fat slice of some cooked meat which I then cube and toss in the salad. It may not be healthy, but it works. :blush:

    looks refreshing...! simple Veggie-fruity combo.
    So you have also added some green capsicum and corn kernels right..

    May I know whether any salad dressing have you added for the flavour/taste?

    Like spicy roasted potatoes + yoghurt + onion + cilantro + some seev (optional) ;) or even roasted peanuts

    I added thousand island dressing a little towards the end. But plain honey will be good if u want it little sweet. Yup. I added green capsicum and boiled sweet corn with some peanuts.
