Monday - Tomato soup Tuesday - red/green bell pepper-beet soup Wednesday - keerai dhal soup Thursday - Minestrone soup Friday - cauliflower soup Saturday - carrot soup with additional veggies or plain carrot soup Sunday - break this is the routine i am following for the past few weeks. the base for every soup is onion and garlic. very easy to prepare and nutritious. i have pepper and cumin powder handy.. try this and enjoy variety soups. no need to go for restaurants.
Tomato soup, serves - 2 tomatoes - 4 corriander leaves - chopped one cup onion - one chopped garlic - 4 pods chopped is ready heat tawa, add two teaspoons of oil and add chopped garlic and onion. saute for a minute. then add chopped tomatoes. saute for a minute. allow to cool and blend...again transfer to the tawa and add pepper powder, cumin powder and reqd. salt... allow to heat for 2 mins..if u want strain with a soup strainer before transferring to the tawa. add a handful of chopped corriander leaves. tasty soup is ready
Red/green bell pepper-beet soup One beetroot - skin peeled and shredded one red or green bell pepper - chopped one onion - chopped garlic pods chopped - 4 heat tawa, add two teaspoons of oil and add chopped garlic and onion. saute for a minute. then add shredded beetroot and chopped bell pepper. saute for five minutes. allow to cool and blend...again transfer to the tawa and add pepper powder, cumin powder and reqd. salt... allow to heat for 5 mins..if u want strain with a soup strainer before transferring to the tawa. If the soup is watery, dissolve a tablespoon of ragi flour in water add to this soup mixture. tasty soup is ready.
intrigued to try this one.. also try sweet corn soup from hebber's kitchen..it's healthy and tastes good.
Keerai dhal soup arai keerai(or ur choice) - only leaves chopped one cup toor dhal - 11/2 cup onion chopped - 1 garlic pods chopped - 4 heat tawa, add two teaspoons of oil and add chopped garlic and onion. saute for a minute. then add chopped leaves and saute for five minutes.add cooked dhal with this. allow to cool and blend...again transfer to the tawa and add pepper powder, cumin powder and reqd. salt... allow to heat for 10 mins..tasty soup is ready.
minesterone soup(this is not original italian recipe. a slightly different version to suit indian taste and to make it quicker) onion - one chopped garlic pods - 4 tomato puree (made out of 4 tomatoes)- two cups chopped carrots, beans, zuchini if u have - one cup pepper powder for taste basil if u have / otherwise leave it - for sprinkling cooked pasta - chop them finely For this prepare tomato puree(blend 4 tomatoes into fine paste) first. Heat tawa, add olive oil/ oil u have, add finely chopped onions, chopped garlic pods, chopped carrots, beans, zuchini and cooked pasta, and salt. then saute and cover the tawa for 10 mins to allow them to cook. Then add tomato puree, pepper powder. Leave it for 15 mins. finally add basil. Tasty soup is ready.
Cauliflower soup cauliflower - 1/2 onion - one chopped garlic pods - 4 cooked potato- one smal pepper, cumin powder and salt for taste boil water in a vessel. add cauliflower florets and switch off the stove. leave it for 10 mins. then drain and keep aside. heat tawa, add onion, garlic, cauliflower florets and mashed potato.. saute them well for 10 mins. after cooling, now blend everything in mixie. retransfer this to tawa. add water if u want. heat the soup. add pepper, cumin powder and salt. tasty soup is ready
Carrot soup chopped carrots - one cup onion- one chopped garlic - 4 pods chopped pepper, cumin powder and salt for taste heat tawa, add two teaspoons of oil and add chopped garlic and onion. saute for a minute. add chopped carrots and saute for 5 mins.close the tawa and leave it for 5 mins as carrots cook quickly. allow to cool and blend. retransfer the contents to tawa and heat the soup for 5 min. then add pepper cumin powders and salt. enjoy the soup. If you want, you can add cooked peas along with chopped carrots, when u blend.this adds more taste.
