hi Im new to IL:hiya ...i have few doubt in chocolate making can u pls help me out what is called stabilzer and how we have to use it? what we have to do to avoid melting when it is out of fridge? where we will get the packing material and ingred material in chennai?( i stay in kk nagar) and atlast what is the exp date of this home made choco?

first time i tried melting a choclate using double boiler i made in to small pieces and tried. but i took more an hr to melt it...i used campco slab... which slab is best and good in taste.
