For Vada: Urad daal - 1 cup Green Chilli – 3 Chopped Curry leaves – ½ tsp Salt to taste Oil to fry For Dahi: Dahi (yogurt) - 1 kg Finely chopped coriander leaves Salt to taste Roasted cumin powder - 2 tsp Red chili powder to taste Water – 1 cup For Vada: Clean, wash and soak the daal for 3 hrs. Grind dal and all the remaining ingredients into a smooth paste. Add salt to taste. Heat oil in a pan and drop spoonfuls of batter and fry till golden brown. Take the hot vadas and put in warm water for 2-3 minutes. Take them out and squeeze the water and keep aside. For Dahi: Blend curd and water until nice & smooth. Keep it in refrigerator for an hour to get chilled. Serving: In a dish arrange vada and pour dahi over them. Now add tamarind chutney / dates chutney and green chutney over it. Garnish with coriander leaves. Serve the dahi vadas chilled :thumbsup

My husband just loves them.....but i am a bit scared bcos by friend said once that if the batter is not blended with the right quantity of water then it bursts while frying.... How to do make big round vadas like we get in restaurants.....???? awaiting your reply...........:coffee -sunitha
