Many people hesitate to make KABULI CHANNA as think it causes gas and indigestion problems.But I would like to share the right way of cooking it,the method which I read in a blog. Soak channa overnight,the next morning drain the water,wash in cold water 3 or 4 times.Then boil the channa in an open vessel for 15 minutes.A froth will emerge.Switch off the stove,pour the froth water and wash in cold water and then add fresh water and pressure cook it the usual way.This way the gaseous substance is removed and can even by used for diabetics as it has low glycemic index.
hi kanaka.. i think i will try this technique; a small concern is- i have heard that when we cook veggies or pulses open (that is without using a lid) we will loose a lot of the nutrients, wont the same happen in here too?
