    Atta Biscuit - Wholesome & Tasty.

    Atta - 250 gms

    Ghee - 125 gms

    Sugar - 150 gms

    Milk - about 1 tbsp

    Powder the sugar.

    Mix atta, ghee & sugar thoroughly.

    Add very little milk just enough to hold the dough.

    You may not be able to roll it comfortably with a roller, but you should be able to pat it well with the hand as thin as you can.

    Cut into desired shapes & bake at 350 deg till golden brown.

    Cool thoroughly & store airtight.

    Paneer Pancakes in Tomato Sauce - a casserole par excellence.

    Pancakes are made first. Filling is made separately. Any filling of choice can be used – paneer & peas, corn & paneer, mixed vegetables etc. Spicy tomato sauce is made. All three are assembled & baked in a casserole with cheese topping.

    Pancakes:

    Maida - 100 gms

    Cold milk - 300 ml

    Melted ghee - 3 tsp

    Salt - a pinch

    Combine all the above to a homogeneous mixture.

    In a non stick, tava, make thin pancakes, cooking only one side.

    Filling:

    Boiled peas - 1 cup

    Grated paneer - 200 gms

    Chopped green chillies - 3, 4

    Red chilli powder - 1 tsp

    Onion - 1, finely chopped

    Oil - 1 tbsp

    Salt

    Heat oil & saute onions for 2, 3 mts.

    Add green chillies & fry little.

    Add all other ingredients, saute till the mixture is dry.

    Remove & keep ready.

    Tomato sauce:

    Tomatoes - ¾ kg

    Tomato sauce or ketchup - 2 tbsp

    Red chilli powder - 2 tsp

    Top of the milk or cream - ¼ cup

    Salt, sugar

    Boil chopped tomatoes with 2 tbsp water.

    Liquidise & add all other ingredients.

    Boil for 5 mts on a medium flame.

    Assembling:

    Cooking cheese - 100 gms for topping

    In a casserole, pour 2 tbsp of sauce.

    Keep a pancake & spread a little filling & spread some sauce over it.

    Build up this way till all the pancakes, filling & tomato sauce are used up.

    The remaining sauce may be poured on top.

    Sprinkle grated cheese & dot with butter.

    Bake in a very hot oven for 20-25 mts till top turns golden.

    Dear Chitraji

    Can you please tell which brand of baking oven we can buy....which is the best??........one of my friend wants to give her mother a baking oven as present for Mothers Day..............Thanks in advance.........

    Since I was planning to go to Vivek's, I thought I will have a look at the O T G s & write to you. I find Morphy Richard's quite good. There are 3 sizes. Depending on her requirement, she can select the size. The other one is Sunflame.

    Pasta Mushroom Bake - A Party Dish !

    First layer

    Boil together to thick consistency:

    Deskinned & chopped tomatoes - 2 cups

    Tomato ketchup - 1 cup

    Second layer:

    Boiled ribbon pasta - 3 cups

    Third layer;

    Sliced mushrooms - 200 gms

    Chopped spring onions - 1 cup

    Chopped capsicum - 1 cup

    Mix the above 3, add salt & pepper.

    Cook till done & there is no moisture left.

    To the above , add
    Chopped garlic - 1 tbsp
    Chopped celry - 3 tbsp
    Fried in
    Oil - 2 tbsp

    Fourth layer;

    Crumbled paneer - 1 cup

    To spread on top:

    White sauce made with 2 cups milk, 2 tbsp maida & 2 tbsp butter

    Grated cooking cheese - ½ cup

    Assemble in the order given.

    Bake in a hot oven for 20 – 25 mts.

    Serve with bread rolls.

    Palak-Paneer-Tomato Bake - this is an eternally favourite combination !

    Palak - 2 bunches

    Cornflour - 2 tsp ( roughly)

    Paneer - 1 cup ( grated)

    Onions - 2, medium, chopped

    Green chillies - 2, finely chopped

    Boied vegetables - 1 cup ( can be a combination of peas, carrots, beans, cauliflower, corn, babycorn etc)

    For sauce:

    Red bright tomatoes - 4, 5

    Red chilli powder - 1 tsp

    Salt, sugar

    Oil - 2 tsp + 2 tsp

    Butter - 2 tsp

    Take out the palak leaves, clean & wash them.

    Boil plenty of water in a veesel, drop the drained leaves & switch off.

    After 10 mts, drain & grind the drained leaves to a paste.

    Heat 2 tsp oil & lightly fry half the chopped onions & green chillies.

    Then add the cornflour, & fry for a few secs.

    Now add palak paste & salt.

    When the mass thickens, remove & spread at the bottom of a casserole.

    Over that, spread the mixture of grated paneer ( reserving some for topping )mixed with boied vegetables.

    Heat 2 tsp oil & lightly fry the remaining onions.

    Add chopped tomtoes, chilli powder & salt.

    Fry lightly & add very little water & cook till soft.

    Liquidise & pour over the assembled mixture.

    Spread the reserved paneer & dot with butter.

    Bake in a hot oven for 15-20 mts.

    Serve hot.
