    Vanilla Buns - a quick tea-time muffin!


    Maida - 55 grams

    Sugar - 55 grams

    Butter- 28 grams

    Egg - 1

    Baking Powder - 1/4 teaspoon

    Vanilla Essence - A few drops

    Milk - If necessary to bind. (about 3 tablespoons to get the dropping consistency)

    Cream butter and sugar till light and fluffy.

    Beat egg into it and add gradually into the mixture

    Sift flour and baking powder together and fold into the creamed mixture with sufficient milk to give the dropping consistency.

    Add the essence. Mix lightly, but well.

    Half fill paper cups. Bake at 375 - 400 degrees F for 15 - 20 mins or until firm.

    Makes about 6 buns.

    Raisins or chocolate chips may be added for an interesting variation.

    Eggless Jam Buns – biscuit like bun-jam combo!

    These can be made, to give children for Navarathri!!

    Maida - 240 grams

    baking powder - 1 tsp

    butter - 90 grams

    Sugar - 120gms

    Milk to mix - 50-60 ml

    Jam

    Sieve flour, baking powder and salt together.

    Rub in the fat and add the sugar.

    Mix to a stiff dough with milk. Knead lightly and divide into equal sized pieces - 17,18

    Roll them into rounds and make a slight depression in the centre with your thumb.

    Add a little jam and place them on a greased baking tray.

    Bake at 200 degrees C for 15 minutes.

    Food Processor Almond Cookies:

    This can be kneaded wih handbeater also. If using FP, all ingredients are kneaded together.

    Maida - 225 gms

    Butter - 180 gms

    Sugar - 180 gms

    Ground almond - 120 gms

    Almond essence

    Milk - very little to mix, only of necessary

    Cream fat & sugar until soft.

    Work in flour, almond powder, essence & enough milk to make a firm dough.

    Allow to stand in a cool place for 5 mts.

    Make small balls & press into discs between palms.

    Keep a thin almond slice on top (optional)

    Bake at 200 deg C deg F for 12 mts.

    Cool & store airtight.

    Makes 3 dozs.

    Eggless FP Chocolate-Carrot Muffins - melts in the mouth

    Melted butter - ½ cp

    Condensed milk - ½ cup

    Golden syrup - 2 tsp (or honey)

    Castor sugar 2 tbsp

    Grated carrot - ¾ cup

    Self raising flour - ¾ cup (or 3/4 cup maida +1/2 tsp baking powder)

    Cooking soda - ¼ tsp

    Cocoa powder - 2 tbsp

    Chopped walnuts & raisins - each, 2 tbsp

    Vanilla essence

    Icing sugar –to garnish

    Transfer to a greased muffin tins or cake tin.

    Bake at 180 deg for 15-20 mts, if muffins or more time for a big cake..

    Remove from oven & cool on a wire rack.

    Sprinkle with icing sugar & serve warm.

    Cashew Biscuits - less sugar BUT more taste!

    This can be made without FP also, by mixing all ingredients together. FP makes the job easy!

    Cashews - 1 cup

    Maida - 2 cups

    Butter - 1 cup

    Sugar - 1/2 cup + 2 tbsp

    Baking powder - 1/2 tsp

    Just to crispen the nuts, bake them in a tray at 140 deg C for 10 mts.

    Cool & powder with 2 tbsp sugar.

    Now mix all ingredients to a dough in the FP.

    Make 35-40 portions & make small discs.

    Place on a well greased baking tray. I made some designs on them with cookie cutter - optional.

    Bake in a preheated oven at 160 deg C for 20 mts.

    Cool & store airtight.

    Oats – Chocolate cookies - Make this using FP as well!

    Maida - ½ cup


    Oats - 1 ½ cups



    Oil - ½ cup

    Baking Powder - ½ tsp


    Baking soda - ¼ tsp



    Powdered sugar - 1 cup



    Cocoa powder - 2 tblsp.


    Mix powdered sugar and oil & beat till fluffy and smooth.


    Sieve maida, baking soda,baking powder and cocoa powder.


    Add this to the sugar and oil mixture along with the oats.


    Knead and make a nice dough.


    Then just take small balls and place it on your palm and press.



    Bake in a preheated oven at 180deg C for 10 - 12 minutes or till done.


    They are nice to look at and are very crunchy.

    If using FP, mix oil & sugar first thoroughly & then add the other ingredients.

    Oats-Atta-Chocolate chip cookies - awesome taste!

    Oats - 1 cup

    Wheat flour - 2/3 cup

    Softened butter - ¾ cup

    Grated apple - ½ cup

    Brown sugar - 4 tbsp

    Chocolate chips - ½ cup

    Vanilla essence

    Knead all ingredients except chocolate chips in FP & finally add the chips.

    Chill in the refrigerator for 15-20 mts & divide into 12 portions.

    Keep each portion between your palms & pat to 2" circle.

    Place on a greased baking tray & bake at 160 deg C for 25 mtes or till golden.

    Remove, cool & store airtight.

    Oatmeal Cookies - crispy & crunchy with a sweet oatmeal flavour!

    Please go to
    OATMEAL MIX

    Oatmeal mix - 3 cups

    Milk - 1/4 cup

    Egg - 1

    Vanilla essence - 1 tsp

    Cinnamon+clove powder - 3/4 tsp (optional)

    Raisins - 1/2 cup

    I used EGG REPLACEMENT.

    In a small bowl, combine milk , vanilla & egg (or egg replacement).

    Put oatmeal mix, spice powder in a bowl & add liquid all at once & stir uuntil JUST BLENDED.

    Stir in raisins.

    Drop small amounts in greased baking sheet & bake at 180 C for 15 mtes.

    Remove, cool & store airtight.

    Makes 30-36 no:s.

    Lemon Cookie - Makes about 2 dozen.


    Sift together:


    Maida - 2 cups


    Baking powder - ½ tsp


    Salt - a pinch


    Blend together:


    Sugar - 1 cup


    Finely grated lemon rind- 2 tbsp


    Butter -3/4 cup


    Finally adding:


    Fresh lime juice - ¼ cup


    Vanilla essence - 1 tsp


    Now add flour mixture.

    On a lightly floured work surface, halve the dough. Flatten each half into a 10-inch disk, and wrap each in plastic. Freeze until firm, about 30 minutes.

    Roll, cut cookies & bake at 160 C for 12-15 mtes.

    Sprinkle sugar on removing.

    Eggless Peanut Cookies - do you love peanuts like me??

    Mix either with hand or in a FP:


    Maida - 1 cup


    Coarsely powdered peanuts - ½ cup


    Melted butter - ½ cup


    Powdered sugar - 1/3 cup


    Make lime sized balls & sllghtly flatten.


    Arrange in a baking tray.


    Bake at 180 C for 20 mtes.


    Keep inside oven for 10 minutes and outside oven for 15 minutes; only then it becomes crisp.
