Chitraji, thank you for a speedy reply. I was thinking of making some zucchini koftas, so I'll use the mix. Also I saw your pictures in the meet up forum, and it's good to 'know' you now. :)

In future I'll post my queries in the thread you mentioned.

    Raj

Party Pinwheels - your family will be “floored” !

    Butter - 200 gms

    Powdered sugar - 100 gms

    Maida (sieved) - 275 gms

Cocoa - 2 tbsp blended with 2 tbsp hot water

Combine, butter, sugar and maida to make a dough (manageable).

Divide the dough into 2 parts.

Leave one plain & add blended cocoa to the other.

    Knead both well.

Roll each into a rectangle about 6 * 8 “ or little bigger.

Placeone on top of the other and trim edges.

Roll up the dough tightly from one long side like a Swiss roll and chill until firm.

Cut into ¼ “ sices, place on a greased baking tray and bake at 375 deg F for 15-20 mts..

    Remove & cool.

The dough can be kept, unbaked, in the fridge, wrapped in a foil for upto 2 weeks.

Looks yummy and sounds easy to make! Quick question though, is maida and all purpose flour we get in US the same?

    Dear Mrs C

The party pinwheels look very tempting. It has found a top spot on my list of recipes to try.
I am sure you must have given the coversion chart for gms. to cup measurement. I prefer measuring by the cup and spoon measures.

    Dear Usha,
Yes, please refer to tips for conversion ( I think, I have given!) or refer in the net.
    BUT
Let me make it very clear that if you plan regular baking, weighing scales is a must!! Cups & spoons are, all said & done, only approximate. For baking, perfect proportion by weight is the key to suceess - foolproof!
    Love,
    Chithra.

Muffin Kesari - dieters’ dish !

This has minimum ghee and sugar unlike usual kesari.

You can substitute artificial sweetener also.

    Roast rava well & cool.

    Mix together:

    Bombay rava - 1 cup

Sugar, milk, curds, water, each - ½ cup

    Ghee - 2 bsp

    Cashews & raisins - 1 tbsp each

    Cardamom powder - 1 tsp

    Saffron colour - a dash

This can be baked in a greased baking dish as a whole or in muffn tins.

Bake for 15-20 mts at 400 deg F.

Serve hot or at room temperature.
