Cold cucumber soup

    Cold cucumber soup


    Ingredients:
    500 g fresh cucumber
    250 g Litre fresh curds
    1 Teacup skim milk
    1 Tablespoon chopped capsicum
    1 Tablespoon butter
    Salt to taste
    A few mint leaves for topping (optional) ​
    Procedure:
    Chop one cucumber finely and cut remaining into big pieces.
    Add 3 teacups water to big cucumber pieces and cook until soft.
    When soft, blend and cool.
    Add the curds, milk and salt.
    Beat well.
    Heat the butter in a pan, add finely chopped cucumber and capsicum and cook for a minute.
    Add this to the soup
    Serve cold Cold cucumber soup
