This recipe is inspired by a vegan cashew pudding recipe, I saw on a food blog. The picture was so stunning. Though, it was a vegan recipe, I tried it with normal cow milk, as I didn't have any nut milk on hand. Do try it friends for your kids, it is yummy. My 2 year old just loved it!! I am planning to try this recipe with jaggery or honey instead of sugar. Will update this recipe once I try. Raw cashews : 2 cups Full fat milk : 2 cups Fresh cream : 1/2 cup Butter: 1 tsp Sugar: 1 cup Drinking chocolate: 6 tbsp Vanilla essence: 1/2 tsp Soak the cashews in water for atleast 2 hours. Drain the water and blend it with all other ingredients in a blender. Pour into individual pudding bowls and chill it for atleast 4 hours. Yummy pudding ready. Note: You can try this with almond milk or coconut milk instead of diary. Also fresh cream can be substituted with coconut cream.
