Chicken Tikka Recipe

    Hi All
    I am from South Africa.

    We have many Indian Restaurants here and I really enjoy chicken tikka.
    In a few of these restaurants, you can view them making the chicken tikka.

    This is what i noticed.

    1) The chicken sits in a marinade. I don't know of how long though.
    2) The chicken is barbecued over a coal lit fire on a skewer.
    3) As it is on the fire, the chef keeps basting it with a marinade. I notice that this marinade is almost full of oil and to me looks different from the one the chicken was originally in. This to me seems like the main part to the whole preparation of the chicken.
    4) The chicken after completing is almost charred with a very spicy flavor and not dry but very most most probably due to the oil.

    Does anyone have this type of recipe?

    Take a look at the site vahrehvah dot com .
    The detailed video demo will give you a very good idea of the process , which can be done easily in the regular oven at home too. You can also try out in outdoor grill /barbecue on charcoal.

    I had a look at what video recipes they have and its not exactly what I am looking for.

    Let me elaborate a bit.

    This chicken made here is in Quarters.
    You either get to to choose a quarter leg piece or quarter breast piece or sometimes order an entire chicken cut into 4 quarters. When I viewed the process of grilling this chicken, this is what I noticed. When the chef receives the chicken from the kitchen, it is brought inside a container. I am assuming in that container lies a marinade which the chicken soaks in, maybe overnight. It is then placed onto a skewer and over a coal lit fire. It is then grilled for a little while on each side. The chef at alternate times applies an oily substance. I am assuming it is Vegetable Oil that has some spices mixed into it. This oil is basted several times over the chicken during the grilling process. The chicken upon completing is not dry but very oily. It is almost charred just to the right degree. That's all I know for now.

    I am sure someone can help with the more finer details.

    I searched tru the forum as you suggested but no luck.
    There are some tikka recipes but not exactly what I am looking for

    Any other suggestions that could help me find what I am looking for.

    Owam,

    I think you are looking for the 'rotiserrie' type of cooking the chicken --- where the meat slowly roasts/cooks , turning all the time ?
    If so, you can use the same recipe as in vahrehvah dot com or whichever suits your taste ; just change the method of cooking. Instead of using conventional oven, after marinating , skewer the full or half chicken [ as per your need ] in a rotiserrie grill and try it out.
