I think one secret could be that till we perfect the recipe, we must make it often so that mentally we can fine-tune (perfecting the minor adjustments) the proportions and improvise. In my case, I don't really enjoy these fried stuffs (my husband and son like it) and so I end up making them at large intervals and I miss out on those minor adjustments! What do you say? Well if you are making at long intervals don’t reuse leftover flour from the opened packets. Maybe that’s the issue here. It may be bit of hassle but buy fresh packets of each ingredient, fresh frying oil packet the smallest sizes you can find and use that up. Use that with freshly made ghee to make them. Any oil is good as long as you don’t go above it’s smoky point so be careful while frying. Is your shop Wala palming off old stock on you by any chance? Hope you are getting from trusted place. Wish you success in your goal of mastering this! I know how it feels.

Regular cooking oil will do,but for an authentic taste go for a good sesame oil like Idhayam.Happy Diwali to you too and good luck
Dear Shravs, Thanks for sharing. My granny was also an expert in muchhore, chakli, nippat, kodbale, Mysore Pak.. In an eternal clash between healthy vs unhealthy, time saving vs time consuming and in a struggle to stay in shape, a lot of these traditional goodies have taken a beating. When a 1/4 kg snack pack is easily available in the shop, why would one want to struggle in front of the stove?! Wish you a happy and prosperous Deepavali.
