Yesterday, i tried a different chutney than usual. The main vegetables are carrot and capscicum. It’s a very yummy chutney, my elder one liked it and guessed the ingredients correctly. He named it as 3 C’s Chutney.

    Ingredients:

    carrots -6
    green capscicum – 1 big
    celery – 1 stick
    green chillies – 4
    tamarind paste – 1 tsp
    salt – 1.5 tsp
    cumin – 1 tsp
    garlic cloves -4
    curry leaves – 1 sprig
    cilantro – 5 sprigs

    Method:

Peel the carrots and chop them. Dice the celery and capscicum. Add them to a non-stick pan with oil and slit green chillies. Let them cook until soft with in-between stirring.

Take a mixer bowl, add garlic cloves, cumin, salt, curry leaves, cooked green chillies, tamarind paste and make a fine paste. Add the vegetables, cilantro and make a paste of it with little water to get a smooth paste. Transfer into a bowl and enjoy it with hot steamed rice along with ghee
