    1/2 teaspoon bicarb.
    · 1 pinch salt
    · 3/4 cup sugar
    · 3/4 cup butter

Cream together the butter and the sugar until light and fluffy. Beat thoroughly, stir in the lemon essence and mashed bananas until blended. Sift flour, soda and salt together. Mix milk with lemon juice to sour the milk, then stir both into the creamed mixture until combined.
Grease and line the sandwich tins. Divide the mixture evenly between the three tins. Bake for 25-30 minutes or until light brown. Turn on to wire racks to cool.

These 'cinnamon sticks' does not only taste delicious, but the entire house smells great. The cookies can be given various shapes but comes out a little soft, yet crunchy. This recipe gives you 70-100 sticks.

    Ingredients:
    200 g butter
    200 g sugar
    1 yolk
    2 tea spoon vanilla powder
    4 tea spoon cinnamon powder
    1 tea spoon bicarbonate, soda
1 (big) table spoon molasses/sugar syrup

    Topping:
    1 remaining egg white
    chopped almonds

Whip the soft room tempered butter and sugar. Add the yolk and mix well. Warm the syrup till it melts to liquid. Now add rest of the ingridents in a different bowl and add mix it all together little by little. (the purpose is to mix all the dry ingredients well). Now knead the dough with your hands. The dough is a little sticky but should be even and smooth.

Pre heat the oven to 225C. Divide the dough into 8 portions. Roll the portions as long as the length of the baking tray. Now put for of the rolls on the baking tray, squeeze the rolls a little flat to give them shape and paint over with the egg white. Sprinkle with chopped almonds.

It takes about 8-10 mins in the oven. cut the cakes into desired length and shape before they get cold as they would break after wards.
