You can try "veggie Cutlet" Veg cutlets, restaurant style veg cutlet recipe - Raks Kitchen
You can refrigerate & deep fry or bake in oven.
Won't take much time, recently for a 25 member potluck I did. Didn't take more than 30 min in Oven, for 35 cutlets.

If you have access to a good restaurant that provides quality and tasty food you can order some dishes while focusing on a few signature dishes at home to make it a stress free and fun event.

If you want to make everything at home, then pre prep is a must.If you are living in India you can hire a cook for special occasions. My relative makes this arrangement whenever she wants to host a party.Alternatively, you can make it easier with a few store bought options. For example, you can buy a 30 piece premade pack of haldiram roti(pulka), you just need to heat them up on tava and serve in a hot box.

Foods that tastes better the next day are Pulihora (tamarind/lemon), curd rice, biryani, fried rice, gravy curries.

If you skip the dosa counter everything else can be prepared well ahead of time. You can create a make your own chat/snack corner.
    • For golgappa shots you can buy the ready made puries, make the pani (you can stick to single or multiple flavors of your choice) and refrigerate. The pani tastes better when it’s served chilled. Best part is guests can enthusiastically refill their shot glasses. I used the disposable shot glasses.
    • You can make the sweet corn chat n refrigerate a night before as this is a cold salad. You can mix or garnish with corn chips just before serving. You can fill the ready made Tostitos with this chaat when you set the table or you can serve them on the side for the guests to scoop the salad themselves.
    • Another option is to buy dry bhel puri mixture from stores and mix with the refrigerated sweet corn chaat just before serving or keep them seperate and the guests can mix in their bowls according to their choice.
    • Since you want to skip deep frying you can try making kebabs. Paneer can be marinated overnight in fridge. You can bake/air fry or grill on tawa to make kebabs. This can be done few hours earlier.
    • You can bake/air fry deep brand bite sized frozen aloo samosas and they stay crispy when not covered. You can also serve ragada on the side.
    • You can buy ready made frozen vegetable spring rolls and bake/air fry.Samosas and spring rolls can be baked/air fried ahead of time.
    • You can buy the mini dry samosas (samosas filled with dry fruits and mixture) from sweet stores and serve. Its also available in Haldiram Namkeen section.

Your menu sounds good. Add fruit juice or punch (homemade if you prefer, make and store in fridge). If you want a cold sandwich option, there are so many you can assemble ahead. Or mozzarella-cherry tomato-basil (caprese) on a skewer (just make sure to cut the ends off of the skewer or toothpick) - it's quick n easy, I made this for my last dinner party, and everyone loved it.

Your menu sounds great- for adults as well as kids. Only addition I can think of is home made salsa or guacamole with the chips and nachos and one curry like paneer or Chana masala (since you mentioned pulao). You could also put a cheese and fruit plate together in your appetizer section. Kids love those as well.

Pizza, soda are part of SAD. Sad American diet that has lead to so many health problems. Wholesome Indian food is the best and a good treat for kids. Your menu with so many homemade items is good. Kids will learn to eat what is available and parents decide what is good for them.

Nachos chips, idli chutney doesn't a mismatching combo?
