Beetroot Anar Raita

    You can call this a raita or a healthy salad and have as it is.

    Ingredients
    Beetroot 1
    Pomegranate 1
    Curd 1/2 cup
    Salt as per taste
    Chaat masala 1/2 tsp
    Lime juice 1/2 tsp

    Method
    Pressure cook beetroot for a whistle, peel the outer skin and chop finely.
    In a mixing bowl add the beetroot pieces, peeled pomegranate, salt chaat masala and curd and mix everything evenly and serve immediately or chill.

    Enjoy Beetroot anar raita/salad with a spicy rice or as it is

    Am sorry missed out on the lime juice, just sprinkle that on top before serving and enjoy your raita salad

    JMO, rather than cooking the beetroot soak it in lime water for 10 min (with skin on) and then fine grate and add to the curd should be better option. Also, subsitute chat masala by cumin powder in any kind of raita.

    Beetroot raita is very new to me.... i like the simplicity of preparation, also like strangerrr's suggestion.... will try them both :)
