The Red Cabbage is available in US and used in salads and I am not sure about the Inida.Suppose,if you keep beetroot in water,the water would turn red.
Since I never brought the Red Cabbage,I don't know how that will turn in water.
The Cabbage which you posted looks too purple compared to Red Cabbage which they sell in US.
Is your cabbage looks like in the above link when you cut into half?if not probably they might have died in India.

We get the local ooty purple cabbage..that gives a blue color to the water...
