Adjusting flame while cooking Non-vegetarian

    when cooking ,which is better
    cook at low heat (though it takes more time)
    or
    keep adjusting the heat,like keep it high when frying the initial onion and then turn it to low...
    i always cook it at low heat, throughout my cooking...though it takes time...
    please advise

    HI,
    I always keep adjusting. Keep it at full while beginnign to cook and bring it to simmer till it gets cooked well. Low heat, I feel, seems to take more time and u are forced to be in the kitchenfor a longer time and that too when the weather is scorching.
    Till the ingredients get mixed up well I will stir and then bring the flame to sim and close the cooking pan so that in a way helps to get the food cooked fast even if the flame is low.

    Hi Ashwini,

    I think it is better to cook in low flame for following reasons.
    1) The high flame will not completely concentrate on the vessel, 10% of heat will be to the surrounding environment not to the vessel you cook; it is a waste of gas and heating your environment.
    2) if you want to hold the vessel with cloth; there might be possibility the cloth might get burned due to this high flame
    3) The food which you cook will not be cooked instead the water evaporated fast hence you ahve to add more water frequently. more water used which evaporates.
    4) taste really differs.
    5) you have to be too fast to search for your seasoning else it will be burned wiht your oil soon and change the taste of your food.
    6) surely an economic solution; but a time consuming one :)

    Ashwini,

    It all depends. I prefer frying all the masalas, onions, tomatoes on high heat at the start of the cooking and then cook the curry with water on slow heat.

    In case, I am not around I reduce the heat to a lower side to avoid burning.
