A diabetic friend - two different idlis..

    A friend visited me. she is diabetic, and has to lose weight, has been asked to avoid rice. A foodie by nature, it is difficult, and had come to ask for ideas to make her diet interesting..now before you start thinking that i cook and make my diet interesting, let me tell you i need put lot of efforts when it comes to ME and i am slowly learning that I am equally important.

    Well lets put the I aside..i am used to cooking food without rice for quite a few years, thanks to my mil who had renal failure and diabetes..

    So I gave her hands on taste of two idlis today, and also taught her another variety..I am sure it will help many friends out here. here i go..

    The first one :

    1 cup broken wheat..
    1/4 cup urad dal
    1tsp methi seeds.

    wash the broken wheat and soak it for 2 hours.
    wash the urad and methi and soak it for 3 hours.

    grind the urad and methi nicely as for idli. if the broken wheat is not too big, just mix the wheat mixture to the urad dal mixture..allow it to ferment. if grinding in the morning, you can make idlis in the evening.


    Cornmeal Idlis.- 2 variation.

    you can make it just like rava idli.

    1 cup cornmeal.
