    Dear rs,
    Rassagolla is very tricky since it comes out best with cow's milk, which we can't get now. It is tough with sachet milk, tetrapack milk etc. So I buy rassagollas & make rasmalai with it. If that is ok for you, I shall post it for you.

    Dear Meena,
    I don't make tapioca chips at home because we don't get very good quality of tapioca in Chennai.
    We make a Kerala dish called " kappa puzukku" with it - Peel & chop into slightly big cubes. Boil with salt. Add a ground mixture of coconut + red chillies + few garlic pieces. Add curry leaves dipped in coconut oil.This is very tasty. If I come across any other recipe, I shall post.

    Dear rsankar,
    This is rasmalai recipe:
    Do try this recipe and let me know if u liked it.

    I find Doss’s and Haldiram’s rossgollas very good. I have not tried other brands.

    For the milk, take 1 litre milk, add ground paste of 5,6 each of badam & cashew & boil till slightly thick. Add ½ cup ( or more) sugar, saffron & cardamom powder.

    Remove the rossogollas from the sugar syrup & squeeze out the sugar syrup.

    Place in a serving bowl & top with the hot prepared milk. Cool & chill thoroughly. Serve with chopped nuts on top.

    tapioca..........

    Dear Chitra,

    I do agree with u on non-availability of good tapiocas here.
    Once in a freind's place in kerala, we were served tapiocas for breakfast along with a chutney-like side dish - it was very hot. think it was a mixture of small onions, green chillies, red chillies, curry leaves and salt. though spicy, it was yummy.

    today my veg vendor swore the tapiocas were tooo good so gave into temptation.
    I just broke them into two pieces now and it looks okay and fresh.
    evening prepared paniyaram so I'll try ur recipe of " kappa puzukku" tomorrow morning.

    flooded by payasam

    Dear Mrs Chithra,

    I love this new trend of anew payasam, a day! At the end of the day, nothing to beat payasam/kheer. I amone of those persons who can never get the sugar syrup in right padam, so my barfis are never in a stage to be cut and served.

    But payasams are so fool-proof. May I add my requests-

    1) aval payasam for Krishnar.
    2) nendran pazha pradhaman
    3) dry fruits payasam
    4) gasa gasa paysam

    Absolutely no hurry, pls take your own time. I am making idli by yr recipe now. FB tomorrow.
