Saarina pudi has many spices apart from coriander seeds. It doesn't have thickening agents like udad or chana dal. Gojju pudi has dals, seseme seeds minus coriander seeds. This makes all the difference. For gojju chitranna and gojjavalakki, since all the spices in Sarina pudi are needed, instead of again putting together so many spices we use Sarina pudi.
